Hello again, Veena, A quick consult from Toronto: I’m planning on having a simple Goan lunch for my next round of entertainment. I’ve made a Chicken Guisado and would like to make Koilorio to go with it. Obviously, I’d have to skip adding sugar, so that the Koilorio are savoury rather than sweet to go with the Guisado. Your opinion please

Sure, Felix. If you feel even the small amount of sugar in the batter could pose a problem for some of your guests, just skip it. As a compensation, you could increase the salt slightly. Taste the batter first and see if you can feel the taste of the salt. The batter should be slightly salty. If you want to be adventurous, you could add chaat masala in place of salt.

Thanks Veena for this awesome recipe. Just one thing, my koiloreos stuck to the pan and had to be removed by scrapping. Is it because of the sugar? Whereas I didn’t see it happening in your video.

You're most welcome. But it's rare to hear of koiloreos sticking to the pan, Lena, especially if you use a non-stick pan like I have done. Just a few drops of oil is all you need to add to the pan before pouring the batter into it. If you're not using a non-stick pan (there were no non-stick pans in the old days) you'll have to use a little more oil, around 1 tsp perhaps. Secondly, your pan shouldn't be overheated when you pour in the batter. And thirdly,, 30 seconds after pouring the batter into the pan, you have to reduce the heat to low. Koiloreos have to be cooked on low heat. Please check the video again to find where you could have gone wrong. The sugar, which anyway is a very small quantity, doesn't make the koiloreos get stuck to the pan. Hope this helps.

Yes, you can, Amelia. The koiloreo will be less tasty, but I guess you must be used to having different foods without adding any sugar to them. However, coconut has its own natural sweetness. So the koiloreo won't be tasteless. In case you' usually add some sugar substitute in your tea, you could add that to the koiloreo batter as a mild sweetener.

Perhaps your batter was too thick, Connie. Or maybe you spread the batter too thinly across your pan. Try grinding the ingredients finer and add a LITTLE water if necessary to get the consistency like I have shown in the video. Also, don't spread the batter too thinly in the pan like we do for polle. And if your koiloreo are getting stuck to the pan, add a little more oil. Actually, koiloreo are quite simple to make if the batter is of the right consistency and the rice is ground properly. Hope my tips will be of help.

Deborah, koiloreos are traditionally mildly sweet. You could add jaggery in place of sugar if you want. They'll be equally tasty. Only, the colour will be pale brown instead of white.

No. They are two different dishes. Please check out my polle video to see the difference. Polle are softer and thinner and don't have sliced pieces of coconut.
