To the past, employer, “what a fool you are for letting this chef go” … love that analysis, Danny. Bang on! His culinary skills paired with his restaurant design vision, puts him heads and tails above the establishment that he was unceremoniously discharged from. It took a lot of courage to start an eatery post-pandemic…good head for business starting with a lower risk ghost kitchen model.
