Perfection...exactly how my mom & dad made it when i was growing up. Yes i said "mom AND dad" because they loved one another the way a husband and wife SHOULD. I was looking for a simple potato soup and I came across your site. I didn't have any frozen veggies or evaporated milk so I made do with what I had in the fridge and the pantry. It was delicious. I used milk but found it was a little thin for me. Since then I have made it three times with all the veggies and the evaporated milk and it is fabulous. Yesterday I made another batch and had it for supper and then again for today's lunch and I expect I will have it for supper again. Your recipes are so simple to follow and don't require that you run out and buy a lot of expensive ingredients that you may only use once. You have a new subscriber. I make my potato soup similarly but I also add a few tablespoons of instant potatoes to thicken....then sour cream, bacon and cheese...served with garlic toast. So yummy and inexpensive...reheats nicely too. Thanks for reminding me that it's time to make it again!

Here in the south of Chile we have like 50 kinds of native potatoes, but my grandmither, who was irish, made this soup with the yellow one, very creamy and strong flavored. From one Iowan to another I must say I make my potato soup the very same way you do! This is the same way my Mother made hers and my Grandmother too! Matter of fact potato soup was our comfort food when any of Grandma’s Grandchildren were sick! I have passed that down to my children when they weren’t feeling well. Using a can of evaporated milk is the best ingredient to add to the boiling potato water and using lots of onion and some celery! Many blessings! Bobbie W.

I agree with you Bobbie, I have made this for my kids over 20 years when they were just coming off a stomach virus or some nasty bug and just starting back with solid food. In those situations I reduced the milk and kept it very light. Of course you don't have to do that if you're healthy you can add more milk or cheese or whatever you like. But for kids who are recovering from a bug or a fever this is a great way to get their tummies started back with food. It is very easy on their stomachs and tasty too.

This is how I make it too. I started using evaporated milk decades ago b/c it is shelf stable, and if I have potatoes on hand I can make soup easily. And I think the evap milk makes it creamier too. Sometimes, instead of salt, I like to use some chicken bouillon, which is salty, b/c it gives it another layer of flavor. I make pea dumplings the same way too, but I do thicken it with cornstarch.

The best potato soup I've ever had was my Mother's Depression Potato Soup...during the Great Depression of the 30's and 40's. Before she died in 1957, she told me how she made it. I still make it that way. It was potato's cooked in milk with a little bit of onion if she had it. The milk came from the cow in the barn. The potatoes were dug up from the field. I have to buy everything from the store...it's good, but not as good as hers. However, I will try your soup later in the week.

Me and my 76 year old mother glean the potato field every other year here in Maine. The tractor usually stops and he tells us where he left some rows for us . Thanks Sheryl. This is all you do to make the croutons. Cut up slices of bread in to cubes. Stale or old bread works well for this. Melt some butter in a skillet. Toss the bread cubes in the butter until well coated. On a low heat, stir the cubes until they are golden brown and crispy the way you like them. You can add more butter during the process if you like. I hope this helps.

I don't like mine with onions or celery. I found a recipe that uses chicken bouillon cubes (2) in the water you boil the potatoes in and half and half cream added instead of evaporated milk. I did not have bouillon cubes when I tried the recipe so I used what I did have, which was fat-free chicken stock. The recipe also used butter. The only seasoning was salt and pepper. I personally like the taste of evaporated milk better than the half and half. To thicken the sauce a little, the recipe added cornstarch. I like Sharon Allen's idea for thickening with instant potatoes, so I will try that next time to see if I like the taste. The cornstarch worked well and tasted good, but who knows, the instant potatoes may be even better. All in all, the recipe was very simple, quick and tasty. The most labor intensive part was peeling and dicing the potatoes.

I make potato soup with a ham bone that I have left from one of my meals . I boil the ham bone for about two hour then I take it out the pot and pull the meat off of it and add the meat back to the pot along with the potatoes, scallions onions, parsley , celery, a little salt and pepper . You can add the seasonings ( of your choice) and after the potatoes have finished cooking I will then add my milk very slowly . next I turn down the burner to medium low , Next Bake yourself a loaf of five cheese bread . Bon appetit !

@@elizabethcope1502 the flavor would not matter to me. Had Covid-19 and cannot taste the flavor. I really cannot taste food anymore. Just a bitter aftermath. Cannot smell either. I could sit down on a dead decomposing horse and eat my lunch and the smell would not bother me. The doctor said being the length of time it has been in all probability my smell and taste will never return. I sure wish that I had gotten vaccinated but I was one of the hard headed people that did not.

@@elizabethcope1502 before my COVID-19 I was a lover of Van Camp pork n beans. I hate them now because of the bitter aftertaste they leave. The aftertaste is so terrible it is almost worth not eating. Black coffee is the only thing that is not terrible. Put creamer and sugar forget it. Rest of my life I will not be able to taste or smell.

I simply cut my bread of choice into cubes, stale bread is perfect. Toss with oil or butter and seasoning if you wish.place in a skillet or baking pan. You can make them on top of the stove or in the oven at 350 degrees. Toss frequently and watch closely. Thanks for the question.

That’s a good question Glen. This soup is the way my mom made it. I’m sure her mom made it the same. As a kid, we had poor times. Chicken broth was something we didn’t always have and when we did it was used for other things such as chicken and noodles for Sunday dinner. This is the soup I grew up on and this is the soup I prefer. I see nothing wrong with using chicken broth if that is your preference. Thanks for asking.

Anita Owens I prefer soup to be soup not thickened sauce. This is the potato soup I grew up with. I’m sure everyone has their preference.
