There are alternatives to surgeon caviar that are good enough to replicate that dish and are fairly inexpensive. I've tasted caviar and I love it but it's at it's best when it's the star of the show. For a salad or a sauce I personally use Mujol "caviar", from a similar fish. Bigger, less creamy eggs but you can get 100gr for 6€ so you can really go to town with it.

Caviar was never "affordable" The video made a point at the beginning that Gordon wasn't just looking for cheap ways, he was looking for sustainable alternatives as the usual way at this rate is going to disappear out of his hands Which the farmed sturgeon is, gordon went there to ascertain the quality if it's really as good as the usual stuff he's used to using, now he has connections so that kind of caviar will be much easier for him to get from that point on

Which is unfortunate, because aquaculture really needs more skilled labor and entrepreneurs. In my second year of uni I met the professor who works on sturgeon at my school. He took me to the tanks. He estimated that - were they not endangered species - there would be about half a million dollars worth of caviar in each tank. There were six tanks. It was a smaller area than most backyards. There are so many amazing careers out there, but guidance counselors just want to talk about being a doctor, lawyer, or engineer.

The only reason Roe from Sturgeon is so expensive is because it is the only TRUE Caviar and each type of Sturgeon gives a different type of caviar(Beluga Caviar is the most expensive) Also there is a low amount that can be fished as there needs to be some to repopulate the species . Though most Countries that sell Caviar have self sustaining Sturgeon farms which allows them to raise the prices even higher. Normal Roe on the other can be obtained by multiple other fish like Salmon and Trout. "The term caviar only applies to the fish roe in the sturgeon family Acipenseridae."

Our sturgeon in the area I live are being poached constantly.. true wild sturgeon, if you can bag a 100+lb female with her eggs, the un-processed body can sell for up to $30,000. Once you process the eggs and prepare them, it can all be sold for as much as $300,000 per sturgeon.

@@timwood5398 If you get caught you will also lose everything attached to your fishing/poaching. They will take your boat, trailer, car, fishing gear.. all of it. And then send you to court.
