There are alternatives to surgeon caviar that are good enough to replicate that dish and are fairly inexpensive. I've tasted caviar and I love it but it's at it's best when it's the star of the show. For a salad or a sauce I personally use Mujol "caviar", from a similar fish. Bigger, less creamy eggs but you can get 100gr for 6€ so you can really go to town with it.

Though most Countries that sell Caviar have self sustaining Sturgeon farms which allows them to raise the prices even higher.
