I think it’s because Gordon is using Fresh Yeast? Im not an expert, but I do know that Active Dry and Fresh has to more take time to rise and bloom. It’s likely that they use Instant Yeast in Masterchef, which doesn’t have to be bloomed in order to work, and takes less time to rise.
