Kosher salt. The granules are about 3 times larger and much less dense than table salt because table salt is more refined. I personally use it for everything (besides already-cooked food) because it's so coarse you can control easily control the distribution of it. tl;dr: it looks like a lot of salt but it's not

This man is an absolute BEAST in the kitchen and is brave and bold and talented enough to step out of his traditional comfort zone and make his version of "traditional" foods. Let's see you try to imitate an Indian style breakfast. I'll wait. Your abueltia made huevos rancheros the way she knew and probably with a different presentation because of lack of resources or talent or because she was just making her nietos and nietas breakfast on the go. Welcome to culinary talent. Elegant presentation. The 20th century. There are now modern kitchens and not just leña and a macho abusive husband demanding desayuno to cure the cruda with. I'm from Mexico and to all the people, even Mexicans, people will tell you these aren't "home made" huevos rancheros and I agree with the "home made" but remember the most important fact, Ramsey is a top international chef so he will make this dish as a gourmet chef would do and put his own twist on it, so I think he has done it very good.

sd4mg idk why you wouldn't eat it, those look fucking delicious. Yeah he tried to church it up some with the plating of the dish, but he's a chef. Chefs in Mexico do this all the time. Idk why people get so emotional when it comes to mixing up traditional dishes. People in different parts in Mexico do it differently as well. My mom's version of this is way more simple and deep fried. Those were delicious growing up and Ramsey won't take that away from me. But if I can make my mom's version better, why the fuck not?

However gastronomy is like language and art, it is subjective and evolves over time, there is no single truth or way to do it. I don't think there's anything wrong with simple traditional huevos, it's delicious in its simplicity as well, however, I find these more creative takes on the dish much more interesting and delicious as well. There's nothing wrong with either, it's just preference.

Huevos Rancheros, Tortilla Nixtamal Guisada en Aceite que quede Crujiente, Salsa Molcajete, Jalapeños o Serranos (depende del picor) tostados sobre comal, Tómates también tostados sobre comal,, 1 Ajo (tostado o crudo al gusto), Sal, Salsa Pico de Gallos, Los ingredientes anteriores en crudo o natural más Cebolla, se cortan en pequeños cuadros y se resuelven, (Jugo de limón al gusto) Huevo termino estrellado, se guías y se conserva la yema sin cocer dura (ligeramente) Queso, Aguacate, o cualquier otro agregado es al gusto... Es fácil hacer huevos rancheros 100% Mexicanos sin necesidad de tanto ingrediente extra, como el caso de las especias, Frijoles en grano, de perdido sazonar con manteca de puerco y sal para darles más sabor... Aunque de verdad prefiero unos frijoles refritos machacados,..

@@rme1383 I don't think there was anything wrong because huevos rancheros are really just eggs over a tortilla accompanied by a sauce. On the other hand, as a Mexican myself, I also felt this cringe feeling over me throughout the entire video. We Mexicans have a sense of pride over what we let others call "authentic Mexican" and if it doesn't suit what we were raised with growing up, then we bash on it. Sometimes it's good, sometimes it's not.

@RobotStuff We mexicans rarely use canned food to make a meal. We live very close to different farms and take our time to prepare things, even a simple tomato sauce that can be shop, we just do it with fresh ingredients. I love how this chefs cooks, and he can reinvent food whatever he wants, but this is not accurate 💁

Gordon overcomplicated a simple dish that uses refried pinto beans, Mexican cheese, quality enchilada sauce and sliced ripe avacadoes. What he made is best described as California fusion cuisine, not huevos rancheros.

I don’t get how many people get so angry and Sophomoric with their insults over Ramsay’s version. The video title doesn’t say “Authentic Huevos Rancheros”. It’s definitely a play on the dish, but it looks like it tastes amazing. I’ve tried so many different versions of the dish myself, some fantastic, some terrible. But this one looks like a keeper to me.
