I've cut my nail partially off before with a knife and had a 1HP Bench grinder chew off half my nail before. It HURTS, Gordon has nerves of steel and played this off like a pro that he is! Lmao.. Get over it Gordon! It's just a thumb nail.. It will grow back! Gordon's a great chef! But it's a pussy job for pampered babies. At my job a few years back I was loading some sharp metal ducting that our company makes, mostly to go into houses and apartments, for the a/c and heating units onto a truck. As I was stacking some of the metal a piece ended up slicing my thumb nail in half and went a little way through my actual thumb, it started bleeding pretty bad! Was all but lunch, I remember wrapping it up with heavy duty plastic wrap that is used for shipping and continued working! Went to the hospital after work, it was 3 I believe.. they numbed me up, ripped off my thumb nail, stitched my thumb, and sent me home

***** The best way to learn in my experience is to pick one new thing you want to learn, and make make a meal around it. Start with a white sauce and work down it's list of derivatives. Just take a second to criticize yourself Can I taste all the ingredients? is it floury/ cooked enough? Do any new spices come to mind? Once you have those questions down you can troubleshoot and build on any similar recipe. Sauces are the best place to get a feel for guessing, how much of what you need. Simple as well because you can just change make a meal by pan searing virtually any meat and cooking any starch.
