To be fair to them, about half of them each season are pretty decent/good. But they're such a pressure cooker, many of them are out of their element. Fine dining is a different beast from 90% of most restaurants, and Gordon specifically runs his kitchens at the highest, precise level imaginable. Unless they already worked at a ridiculous award winning restaurant then they couldn't be ready for that.

I've listened to Gordon's preparation videos about Steak. But I'm not a steak eater. I usually prefer OX TAIL. I use his methods when cooking any and all meats and his steak preparations definitely help me make my Ox tails. Especially "rendering the fat". Realistically, the fat of the meat when added to some Olive Oil, produces its own gravy.
