@BrianEdwardAshmore
@BrianEdwardAshmore 2 жыл бұрын
@@derbigpr500 Because properly made olive oil is a more involved process than the shortcuts and corner cutting in modern extra virgin olive oil production you're finding in most places. Extra virgin olive oil commonly available leaves a burning sensation in your throat that proper olive oil never ever should. Extra virgin pretty much means most of the traditional process has been removed in favor of cheaper and faster production.
@gnomche
@gnomche 2 жыл бұрын
@@BrianEdwardAshmore wrong. Extra virgin olive oil is cold pressed, while normal one is process where olive is chrushed and oil is separated from pulp in centrifuge. The proper extra virgin olive oil will leave a tingling or burning sensation in throat and that iis caused by polyphenols. The antioxidants found in olives. If there is no tingling sensation in your throat it not pure extra virgin. And before you try to sound smart i worked in olive farm in Croatia for 3 years. I was making it. Gordon is in Rovinj, at the island St. Katarina part of Istrian peninsula (Heaven on Earth). The dish is called "Brudet" and is missing any type of red fish to complete the dish and it should be a bit more soupy. Also we serve the "Brudet" on 2 grill roasted and garlic brushed slices of bread (preferably ciabatta bread) or grilled polenta enhanced with rosmary. And thank God someone is presenting real Croatian food.

For the longest time I always sorta picture Croatia as this eastern bloc country. And I'd imagine that's because it sits right next to the likes of Bosnia/Slovenia and isn't far from Czech/Serbia etc. Up until a few years ago I saw some picture of this "random" coast line and when I figured out where it was I was honestly surprised (it's got some amazing scenery inland as well that you should look up> Croatia from above videos are stunning) I blame myself because I've spent time in Europe and I love travel shows about tons of countries and Croatia never really popped up on any of them.

So for tourists I would advice checking it out, I bet you would be plesantly surprised.

@@primozpodjed6704 having travelled through both countries this summer, I agree with you putting Slovenia away as a 'bloc' country against Croatia is unfair. Actually I'd say Slovenia stands very strong in its own beauty. Also, the moment you cross the border from Croatia to Slovenia you notice people of your country actually take care of cleaning up rubbish, keeping the houses well maintained and having a good looking garden along the house. In that respect, you are much more like Austria. Greetings from a country that also keeps their houses well maintained and where you're expected to have a good looking garden (at least in the villages) 🇳🇱

@cetterus
@cetterus 2 жыл бұрын
That risotto tends to be quite popular. Notice how weird the term "historical cuisine" sounds? Yet you can find some great ancient recipes still alive today. "Marinada" and "savur" recipes origin from ancient Romans. They were used to keep food fresh during winter time- combination of seafood with vinegar or salt. They evolved in some of the most amazing flavors I have ever experienced. There are some gross ancient Roman recipes as well. Found in ruins of Andautonia, close to Zagreb (Scitarjevo village). They include sweetwater fish guts dried in sun. I guess we kept just good stuff.
@igorgagula1769
@igorgagula1769 2 жыл бұрын
For Croatia it's kinda hard to say historic cuisine cause the country has been on a tri-border of 3 different regions and spheres of influence. You have medditeranean (the one on the show), central european (influences from hungary and austria/germany) and southeast european/balkan (balkan and ottoman/turkish influence). The local, historical food, architecture, traditions wary from region to region. For a country of that size we have sea, mountains, valleys, hills, cities, towns and so on.... a ton of differencies in a relatively small area with some of the most amazing national parks. I live and travel here for 30 years and I don't think I managed to experience more than a 1/3 this country can offer.

Fun fact: This is how its done in Istria, Rovinj. In Dalmatia, southern province, every island has its own way of doing stew and there's a lot of islands :D, some versions look similar but most of the time You can notice the difference. Shrimps are mostly used in different kind of dish called "Buzara" where they are the main ingredient. Stews are done mostly with fish instead of shrimps & shellfish, on some islands even fruit is added, red wine etc...

But our cuisine is really varied and in winter we might eat something completely different like Hungarian style goulash or German style sausage with potatoes and sour cabbage, at least in the continental part of the country. And then there's the classic spit roasted lamb which a lot of people dont seem to know about but is absolutely divine. Lot of good food here

that little sequence with the electric guitar while he rants single-word ingredients and instructions is just wild. I really like this version of ramsay's character, he's like a weirdly intense food goblin, who basically interacts with the world in the same way regardless of whether anyone's around to see it - just like, unending mantras of "beautiful. that right there - be generous, with the most - amazing - literally, just - dice. sear. drain. drizzle - with a little extra virgin olive oil. now. pan. in." like a mad culinary profit, narrating his entire life as it happens. he's practically a demi god in these. I love it.

Hey Gordon, olive oil is even better in Dalmacija. For me at least. It is totally different and has got nothing to do with olive oil from Istria. Like its oil made from a different thing when you compare it to Istiran. Istrian is much more bitter and has taste like meadow, Dalmatian tastes like olives :) Some people prefer Istrian some Dalmatian. You would like Dalmatian oil even more I bet.

A Croatian cook would NEVER put that many competing flavors things into one stew, capers, olives, leeks, potatoes, etc.. etc.. local food is far more simple so you don't get lost in all the flavors happening there. The mix of seafood is common, but from there it gets a little overwhelming. Simple food = simple ingredients.

I liked the fact he made a no stew stew as I do that when I fancy a stew but I’m not willing to overcook things (I eat raw food mainly and only ever cook things lightly). The only thing I’d do different is season at the end to avoid damaging the salt and pepper by heat and I’d make a raw blitzed tomato sauce that I only heat until piping hot which doesn’t take long and I wouldn’t cook the vegetables for quite so long. He used pre cooked boiled potatoes but for how long were they cooked? He needs to break things down better as you can boil a potato for too long as they should still be firm in texture and trust me they taste way better cooked al dente.
