The problem was they were SUPER obnoxious and it was hard to focus on what he was doing because they were WAY too extra. Giggling non stop like they've never watched this man cook before when he's a professional celebrity chef. This channel makes a lot of money I'm sure so at some point you have to make sure the focus is on the food.

Its so impressive the way Gordon seems to know every little detail of each individual ingredient. To know that thin slices of eggplant need a hot pan with hot oil to stay crisp and clean is so impressive.

EDIT: read description this was filmed before the family were all together. Looks like this isn't the direction these videos are going, phew! I really really miss the charm of the whole family. "Pan Down!" Great recipe, always love watching you cook, but this video felt worlds apart from the others in the series. Reconsider this! There was something truly magical being captured, and I feel this video lacks that. It's not enough to get a dislike -- but I just wanted to say I miss the natural, honest and intimate insight previous videos had.

The initial salting isnt seasoning, its done to make the eggplant sweat so that its crispier. Its not necessary for baby eggplants

You need to salt eggplant and let it sweat then pat dry the liquid that salt will draw out. If you don't do that with eggplant it will have a nasty bitter flavor kind of like burnt garlic.

Get yourself a copy of The Flavor Bible instead. No flak on gordon but if you want recipes theyre all over the internet. The flavor bible is a giant cross reference chart that shows you what goes with what and lets you upgrade recipes you already have or make your own

Had some nice fresh snapper and wanted to do something other than blacken it, worked in this recipe like a charm. Threw a few marinated artichoke hearts in the sauce too and served over creamy polenta. Definitely a winner.

"10 minutes y'all, you just have to have that left-over couscous that's always on hand in your kitchen". Much like the seven-or-so varieties of genuinely prepared stocks you need to use at least one of to put many dishes on the plate. I really enjoy these recipes, and I love you as a chef, but if the medium explicitly defines it as a 10 minute meal, let it be one.

1. The shallot is already peeled - that takes longer than slicing it for many people. 2. The garlic is pre-peeled. 3. I've never seen a piece of fish fileted that thinly from an American supermarket. Is that common in the UK? 4. The oregano, lemon, tomatoes, and eggplant are pre-washed. 5. I get someone having vegetable stock lying around. But those chopped tomatoes (at 4:01, not the cherry tomatoes) were likely from a can. Is he wasting a whole can of crushed tomatoes for a couple of tablespoons? 6. The olives were pitted offscreen, no?

@Globglogabgolab 2.0 before he opened his first restaurant he was a sharholder and headchef at a restaurant, called Aubergine. He left over the sacking of one of his chefs but mainly to pursue 3 stars. Anyway they sued his for loss of earnings cause the book for the reservations went 'missing' and majority of staff followed him. Look it up😳
