I even managed to make the crumble 'filling' ahead without the lemon and placed it in the refrigerator. Prepare the topping and add lemon zest and juice just before it's ready to go into the oven. Lovely dessert for a cozy evening with friends

Chefs will usually recommend you don't follow precise recipes, and instead just try to approximate it. It's better to build an actual understanding of how much X you should use through trial and error, rather than learning averything by heart for every recipe. It makes you a much better cook, and makes it all feel less like a chore

INGREDIENTS 6 tbsp caster sugar Pinch of ground cinnamon 1 vanilla pod, seeds only 6 apples, cored but not peeled, 3 of them grated, 3 cut into chunks 3 tbsp dried cranberries Zest of 1 lemon, juice of ½ For the crumble topping 100g plain flour 2 tbsp demerara sugar 50g butter, chilled and cubed Pinch of ground cinnamon 4 tbsp nutty granola or muesli COOKING INSTRUCTIONS Serves 4 Preheat the oven to 200°C/Gas 6. Heat a small hob-proof baking dish, add the caster sugar and heat for about 5 minutes until it caramelises. Add the cinnamon, vanilla seeds and grated apples and cook for 1-2 minutes. Stir in the apple chunks, then mix in the cranberries, lemon zest and juice. Remove from the heat and set aside. To make the topping, place the flour, sugar, butter and cinnamon in a bowl and rub together with your fingertips until the mixture resembles breadcrumbs. Add the granola and mix until fully incorporated. Scatter the crumble topping over the fruit and heat the dish again on the hob. Once the apple mixture is bubbling, transfer to the preheated oven and bake for 12-14 minutes until the topping is a deep golden colour. Remove and serve warm.

Gordon Ramsay THANK YOU for scraping the WHOLE vanilla pod. I usually get irked by others on video or television who only scrape half and trash the rest of the pod/s. There was one video/episode you made where you scraped half the pod but already had the pod in half so you included both pod halves in the mixture so nothing went to waste. Many thanks for not wasting ingredients as much as edibly possible. I am the same way. :D

KZbin must be spying on me, I literally just made Apple Cranberry Crumble last night. 🙂 I used almost the same recipe, except don’t bother with grating the apples (I just coat them in brown sugar with the cranberries and bake covered for about 20 minutes to get them bubbling) and haven’t tried adding lemon juice yet. Also I usually use oatmeal in the crumble for a similar taste as the granola, but the granola instead sounds like a good choice too so I’ll maybe give that a shot. But for sure, apples and cranraisins have been my go-to combo for both crumbles and Brown Bettys for a long time, it’s a great mix. 🙂 (Brown Betty being virtually the same recipe except instead of crumble you’re doing a layer of bread crumbs with butter on top.)
