I found with the Turkey, mixing the lemon juice vigorously into the butter first helps it not seperate. Only a half lemon at a time or it will just swim, at least for me it did. I will love this recipe forever.. it's so good.

@@AnaRodriguez-fn4pk If you're worried about burning, we place a *very* small piece of foil over top of our turkey breast when we bake it (that's not using Gordon's recipe though). If you're attempting Gordon's recipe it's best to go without any kind of a cover, it allows the skin to brown in just the right way.

I love cooking for one and bake a turkey in an oven bag. I put chopped celery, onions and carrots inside the bag as a nest for the turkey to sit on. I always used plain butter rubbed on top but will change to your flavored butter this year. I do like salt, pepper and rosemary inside. For me I like having all the meat fall off the bones and tendons, then rip into bite sized pieces and put in freezer bags. The veggies just blend into the meat. I fry up all the chopped giblets and neck and make a gravy with chicken stock, only taking out the bones, also freezable. Could you do a video of a cook in the bag turkey? 🥰☕️

Quick question - I’m going to do the Turkey recipe this year. When do you use the reserved juices from the tray - ‘fat removed’ doesn’t look like it’s used - but must be added, maybe along with the chicken stock?

Same goes for making any gravy with the meat juices, add resting juices, simmer 5 mins to reduce and enhance the flavour, then add your stock and further reduce to required thickness of your gravy, hope this helps fella. merry christmas!

I remember mum putting bacon, criss crossed, over the turkey back in the 50s....I am 76 and still do it. Also I cook the turkey breast side down. All the juices etc, run down to it and it comes out really moist...

I made a slightly modified version of the turkey this last Thanksgiving. The first hour was smoked on the weber charcoal grill. Getting prepped for this year already. The long rest makes all the difference.

Cooked Gordon’s Turkey with gravy today, first time I’ve cooked turkey and it was so delicious and moist, the best lesson learnt was to prepare as much as you can the day before including boiling the potatoes ready for roasting. Thanks Gordon 👍

You can. Follow his instructions and you'll have no problem. I did one year and never had cooked for Thanksgiving, ever. It came out really well and I've done it 5 times (4 Thanksgivings and 1 Christmas) now. Last year, I did his ham recipe and it was amazing.

I do this every year, never fails, as long you don't over cook, I did this last month and when started to carve it wasn't fully cooked, so if this happens, take off the breast, legs and wings, meat side up and cook a bit longer at 350° keep and eye on it, mine came out perfect, don't put the whole bird back in.

We soak the smoked meat and ham (which is very salty) for a whole night! Then put it to cook in a large pot and add red onion, garlic, whole pepper, bay leaves and juniper berries. Then we cook it until the meat falls off the fork, then we take it off the heat and leave it to cool, with the sauce in it, of course. The ham cooled in its own juice approx. the next day, take it out, drain it, put it in the fridge and, when it's hot, eat it with boiled eggs, mustard and sweet cake at EASTER! We filter the juice and cook either beans or sauerkraut in it, of course we add other things too! Hi! Anna from Hungary!

What I loved the most was the way the cameraman made sure none of the shots ever really allowed the viewer to see exactly what was going on. It was always zoomed in super-close in soft-focus, or jerked around aggressively. Both techniques result in you having to imagine a lot of what Gordon is doing. Just what I want when I’m following a complicated recipe.

hahaha i so feel you! I'm trying to translate his bird weight to mine and the temperature of the oven in celcius to farenheit.. how much soft butter was that? How much olive oil is a tad? Wait!? Cider; is that alcoholic or apple cider? I know it isn't vinegar so I'm safe lol.. (maybe) The FDA said I can't leave my turkey out longer than 2 hours total.. that's a rush for dinner if the bugger is resting as long as i cook it lol!!! Hmm.. what else? Glad he makes transcript avaliable because some of the French words are hard to understand and now I know how to spell an ingredient, like Madeira wine. Also happy that some wines are available in smaller bottles. Not a wine drinker and did not want to use 2 cups for a recipe and waste the rest of the bottle. 🤩🤩🤩🤩

Use many of your recipes. Problem for me is some things, like your ham aren't easy to find here in France. Luckily my butcher strives to please us, since we have been customers for over 25years. I'm American, my husband is French, and my husband's grandmother is Scott.

I've switched to beef at Christmas because here in the U.S. we have turkey at Thanksgiving and that's a lot of turkey in one month. I tried Gordon's Wellington some years back, but I just don't seem to have the knack for cooking beef yet!
