The "rendang" is the traditional dish from West Sumatra. The word "rendang" was derived from a West Sumatran verb "randang" or "marandang, which means "a method for cooking something for a long time until all the soup is dry at all". The West Sumatrans, or also called "the Minangkabau people" or the Minangs for short, liked to eat buffalo beef. Initially, long time ago, rendang was made with buffalo beef. That kind of meet is very hard and difficult to eat. The Minang people managed to find a way how to cook buffalo beef into food that could be eaten more easily. They cooked it with a lot of tropical spices, red hot chilli peppers and thick coconut milk, with the calculation: 1 kg of buffalo beef is cooked with coconut milk taken from eight big coconut fruits. They cooked it all in eight hours with wood continuously until the coconut milk was gone. This process is called "marandang". The result is called "randang". In Standard Indonesian, we call it "rendang". Today, it is difficult to get buffalo beef. People replace it with cow's beef. It is more tender than buffalo beef. So, they use less coconut milk in adjusting the hardness level of cow's beef. Therefore, they cook rendang only around four hours. When this traditional food has not cooked until really dried, or in other words, we still have the thick soup of it, we call the product "kalio". However, if we continue to cook it until the thick soup is completely gone and replaced by dark dregs, we call it "rendang". The Minang men have tradition of going outside their homeland in West Sumatra to far lands, including Malaysia. Minang women remain in their homeland, take good care of their homeland and the whole province becomes matrilinileal. Family's name is got from the mother's side. Women are the conquerors of this clean province. As far as I know, Minang people in Indonesia make rendang with fresh ingredients. However, Minang people in Malaysia make rendang with dried ingredients. That is a story about rendang that I know. I know this story from mouth to mouth. Long time ago, there was not any Internet connection or Whatsapp.

Well it's not your typical "ikan asin" mate. I believe it's the local specialty: endemic "ikan bilih" and it's quite expensive. Last time i checked in pasar bukittinggi it cost 150K per small plastic (the kind of clear plastic that usually used for street lemonade/drinks, dunno the real weight). and it was like 5 years ago. might sells for 200k now lol. unless they managed to sustain the population since it is/was close to extinction.

That is one Michelin grade omelette 🤤 Honestly, I did try to cook an omelette with rendang paste before, although not as elaborate as Chef Gordon Ramsay and I believe his omelet tastes way more delicious. I got a leftover rendang paste, so I used it to cook an omelette. Of course, I ate it with rice. Hehe. One time, I used rendang paste for fusilli as a sauce. Just plain fusilli with rendang paste, it's so yum. I didn't like rendang when I was little because I used to dislike spicy foods, I start to love it when I reach 14 years old until now. Anyway, I will try to make Chef Gordon Ramsay's omelette. It's mouth-watering. Gotta screenshot the recipe 😋

You just need to cook the simple scrambled egg and pour the rendang paste on the top and.... serve it with steamed rice or rice cake .... it's ... mouth watering delicious dish (I promise😉). Try.... I also like to serve the rendang paste spead on bread toast ... oh.... so good 😍 There's many Indonesian food you should try.... Soto ayam (chicken soup), gado2 (salad), sate , pecel lele, nasi bakar.... etc. Guatantee you will love it 😉

RANDANG (originally) or RENDANG (famous as) is authentic Indonesian cuisine originally from West Sumatra, Indonesia. its supposed to be cooked on TUNGKU made of TANAH LIAT and take hours to finish the dish and reach the perfect level of tastines. thats why its called RANDANG. RANDANG means SLOW COOKED. its famous in many other countries such as Malaysia, since there were alot of Minangnese (people from Padang or Minangkabau) went to Malaysia and reside in Malaysia. Minangkabau people has a tradition called MERANTAU (if you ever watch Indonesian movie starred by IKO UWAIS) when they are teenagers, they are encouraged to leave their hometown to gain experiences so that when they are back, they will be useful for the soceity. this culture and tradition heavily influenced Negeri Sembilan (especially) because Negeri Sembilan was originally Minagkabau's colony

That’s how normally we make traditional egg omelette in Indonesia, with ingredients like shallots, garlic, chilli, then you pour down the eggs, I’m just saying it’s kind of different with how Europe or America made their omelette, the beauty of food :)
