He can, but that leaves the Knight undefended from Qxf6. Furthermore, after Qxf6 white is also threatening black's rook on h8, and if you try and move it to h7 it gets taken anyway after Qxf7+.

This might be the best video for insight into Levi’s brain. He makes the best move he calculates in a hard to read position. And only after the move is made does he get self doubt. Something about the relief of making his move and waiting on his opponent’s move lets the doubt creep in. It feels like a very human and very relatable reaction especially for those of us with lower self confidences. It’s great to see he’s aware that it’s happening in real time.
