I think fixed expressions are great for people who are just begining to learn, when I started about two years ago, I learned almost all of these right away. 不好意思 and 没问题, were the first expressions I learned and began using them as much as possible. Now my vocabulary has grown and I use and make longer phrases, but learning stuff like this in the begining, is very helpful.

Since my biggest problem is to hear spoken mandarin, I especially appreciate the way you first say the expression very slowly, then at a more normal speed.

For learning tones and pronunciation, I thought that I would have difficulty too, but I started to mimic the native speakers that are teaching me and so with that, I don't seem to have an issue. Try to do that as much as you can, that way you can focus more on vocabulary and grammar building and listening exercises. Good luck!

Can you speak faster Chinese? Nobody NEVER speaks so slowly, even beginners speak in more natural human way.

She's probably speaking like that because it's easier to get the tones. Furthermore, she speaks slowly, then faster and also shows a clip of a real life conversion, isn't that enough?
