Another easy option for the crust for a pot pie is to use puff pastry. It’s so good. The first time I had colitis many years ago, my husband (my boyfriend, at the time) took care of me. I ate only chicken broth for 2 weeks, and then he made me homemade chicken pot pie using puff pastry. It was so delicious. My mama used to make chicken pie with a lattice top, all homemade. I was blessed with a mother and 2 grandmothers who were all great cooks, plus my husband. I suppose I’m not too bad either, but I had wonderful teachers. 💕

Does well with an upside-down fork, as do most Brits and Europeans. I never got the hang of the method. Babs I think you should try a tuna casserole next. And see how he likes it... They're made with tuna, cream of chicken, egg noodles and peas... I like to also put Green olives in mine and I always season it with a little Dill... Also, to help him increase his red blood cells, you should give him more vitamin C... Like kiwis, tangerines and oranges... They attract iron in the body. You can also drink wheatgrass juice as well...

This is a man who likes to eat and knows what he likes to eat. Fantastic to see him enjoying a pot pie and that spinach look scrumptious. Here is something if you want to try, red beans and rice, Louisiana cuisine. Red beans and rice. 0.45 kg dry Red kidney beans, soaked, picked, and drained 1 Green bell pepper(capsicum for the spiffy grandad) small dice 1 Large yellow onion small dice 2 celery stalks/sticks small dice 30mL minced garlic 1.42 L water 2 bay leaf ½ teaspoon of Cayenne Pepper powder 1 teaspoon dried or fresh plucked thyme ¼ teaspoon ground sage 1 tablespoon parsley finely minced 1 teaspoon Cajun Seasoning (see recipe below) 0.45 kg Andouille sausage sliced or cubed how you like. 475mL Long grain white rice 950mL water ------------------------ To prepare the Cajun Seasoning: 2 ½ tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried leaf oregano 1 tablespoon dried thyme Mix together thoroughly. ---------------------------- To prepare the beans: Take your beans and soak them in water over night, pick out any stones or beans that float. Once soaked properly drain the water and set aside onions, peppers, celery, and garlic put them in a 4+ litre pan to sautee until tender. Fun fact in Louisiana they do not have carrot in their mirepoix, instead they use the green bell pepper for the carrot and call the mix holy trinity. Pour your soaked and picked beans along with the 1.42 L of water into the pan with the trinity. Add your spices and bayleaf and bring to a boil, then lower to a simmer and simmer for 2½ Hours. Add your sausage, stir, and simmer for an additional 30 minutes. ------------------------- To prepare the rice: Rinse your rice with cold water from the tap by swishing it and pouring it out till the water is clear when you pour Pour the 950mL of water into the pan with the 475 mL of rinsed rice cover with a lid or tin foil and bring to a steam, once you get steam running, put the temperatire to its lowest setting and let it cook for 20 minutes. Remove from head and fluff with a fork. Alternatively if you have a rice cooker, use that instead. Serve it like a curry, put the rice down in the bowl or on the plate and then smother with the red beans. Some Southern Traditions say "Whoever gets the bay leaf on their plate doesn't have to do the dishes!" So, I need to add, you can reduce the amount of cayenne if you don't want it too spicy.

Spinach is very high in oxalates. Too many oxalates can cause issues. Not to mention plant sources of iron aren't easily absorbed by the body. Small servings of liver, or normal servings of beef would probably be the best bet.

You should start cooking organ meats for him such as heart or liver, or medium rare beef to go with the spinach. The iron you get from meat is different than from plant sources, and they will complement one another. You can ask the Doctor about a supplement such as ferrous gluconate. It depends on the type he is low in.
