Cantucci is a type of traditional Italian biscuit known as biscotti.
These very easy twice-baked almond cookies are extra crunchy, and usually paired with a sweet dessert wine such as vin santo or in some areas muscat.
Ingredients:
4 eggs
500 g all purpose flour
250 g sugar
200 g almonds
100 g unsalted butter
12 g baking powder
1 pinch of salt
Lemon zest of 1 lemon
1 tsp vanilla extract
Bake the logs of dough for 30 minutes at 180°C (350 °F).
Use a sharp knife to cut them at an angle into slices about ½-inch thick. Place the cookies on the pans, cut sides down, and bake for 10 minutes at 180 °C (350°F), or until golden.
