I've watched Hiro and Chef Chris Cho and I learned and made my first California Roll. I was very happy with the outcome. Now I want to experiment making different types of sushi rolls.

I've been trying to teach myself how to do this kind of thing. I had a presentation in mind for the lobster meat rolls but the head didn't turn out right. Just gotta keep trying! Hopefully I'll figure it out eventually. Looks so delicious!

Can easily understand the restaurant price being 3 times as much, you wont make double the profit, you have kitchen staff to pay for, waiters, cleaners, front of house staff, bar staff, then business rates, taxes, insurance, and it goes on, you cant run things on a loss

I work for a seafood restaurant. After labor, ingredients, etc. We sell the lobsters for almost no profit. To make the same profit off lobster as they do on other items, they would have to charge around $30/lb... But people can't afford that. It's more of a luxury item.

Well put it this way..... If people would be paying that much and that's very figuratively and depends on each item as they all have different pricing and some as mentioned really don't bring the value you'd expect. You forget alcohol sales.... premium example...Johnny Blue, 100-130 a bottle, but sell it for 50-70 per 1ounce..... Do I think it's bad????, not always affordable-sure,,, but I know I'm gonna be spending money and expect certain grade of greatness in all areas if going to a place like this 🤷♂️🤷♂️🤷♂️ How many times do you get a effn "lobster roll" and get a whole 3/lb lobster??? Regardless if the meat yield isn't even close. Most people use substitutes and or lower quality products.... So yeah++also there in S/SE Miami. I'd get good on some local fisherman that hit the keys, spiny lobster is prevelent and highly highly available in that area (year/round). Just as good a Maine, but no claws.... You get raped ordering this as said cause your usually not even getting REAL or ALL 🦞

England in the summertime has the best seafood. Hiro would be a sensation in UK. Hiro should come and film a series here, Cooking the fish, shelfish, lobster, crab, abalone, razorfish, cuttlefish, squid, limpets, urchins, prawns and great, In Devon , Cornwall Guernsey you find all this in the rock pools at low tide. When I lived in California and I went to the pier to eat crab (live boiled back then) I would always let one go. Did the same with lobsters in Maine. I hope they thrived and procreated.

When you're picking out live lobsters, look for the one that has a couple barnacles on its shell. That one has been in that shell for a long time and is probably ready to molt so it's stuffed full of meat.

Question. I roll sushi as you know. When I buy "eel" sauce it's very runny. I buy a bottle of "sushi" sauce which is just like eel sauce but a little thicker. Which one do you use in this video? Do you know what the difference us between the two sauces?
