I hadn't been to Thessaloniki for 17 years, after arriving at the hotel, the first place I went to was a bakery and bought Koulouria - nothing close to this in the UK :-(

Your cast iron skillet has a lot of rust from using it with water :(. Suggest you use an enameled cast iron skillet instead. Your recipe looks great, will be using it when out heat week is done.

They look so good. Only thing, they are not a bagel. What you need is a true New York bagel. The water makes the difference.
