About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

Julie Kudo yes some KZbin videos just go on too long. chef john is a good example of someone who does it well. I hope that Asian KZbinrs can improve their recipe videos

Hi , I am so in love with this bau thai chicken fried rice which has egg , bok choy, chicken , stickiness of somekind..i love it....could you please help me prepare this recipe with ingredients available in Canada.Is it possible you could help me prepare the same taste fried rice.which rice do i use? sauces which to buy.Really looking forward to receive your reply soon.Thank you so much .

I tried it! From scratch! As my mum is vegetarian I used miso instead of shrimp paste and soy sauce instead of fish sauce. I used fried tofu, fried eggplants, french beans and bamboo shoots as the main ingredients. It was AMAZING!! Thank you Pailin !!

Hi there, Are used to go to your restaurants in Vancouver. Do you have the best food. I lived in Vancouver for over 30 years and now I’m back living in Nova Scotia. Kind of sad you can’t find all the ingredients you want in here like you did in Vancouver. But I make it do lotta times I order off of Amazon for my dry ingredients. Keep up the good work my girl you’re doing an amazing job. Graduations.

I was hoping this was the old curry video because I want to see how you make it with Thai eggplant. Can you tell me how long do you have to simmer the eggplant if I use that instead of bamboo shoots?

Hi Pailin, This looks fantastic! I wonder why you omitted tamarind and lemongrass however? When would you need to include those or why aren't they always necessary? Many thanks!

+MaccaMJ Normally, there are no tamarind in Thai green curry broth. If you apply tamarind; it will turn this 'green' to other kind of curry. Beside, it is no need to add lemongrass as well since small amount of lemongrass was already mixed in curry paste.

Squid brand mostly - this one kit.co/hotthaikitchen/ingredients-i-use/squid-brand-fish-sau - but if you want to be extra fancy Red Boat is the best kit.co/hotthaikitchen/ingredients-i-use/604074-red-boat-premium-fis ... but expensive :) Cheers! Adam

While there are SO many brands of fish sauce to choose from, the one most commonly used in Thailand (and therefore the most typical for this - or any - Thai recipe) is TIPAROS.

Hmm the curry seemed kind of thin. Any methods to make a thicker curry? I was thinking maybe fry the chicken. Separate to have less juices go into the final product or maybe less stock or reduce down more?

You can add more coconut milk, and less stock, and reduce it more, it will be delicious 😊

I made this green curry but used green curry paste in a jar from the super market at it was AWFUL. It tasted nothing like the green coconut curry I am used to. I was so disappointed! Curry paste is very limited here in the US, and the store only had one brand. I will have to try again with something different... :(

+Coffee Girl It is a technique to separate fat and water from coconut milk since she want to stir fry her curry paste to get its aroma.
