If you blanche youre onions first for one minute and a half in a good stock and then blend it up you dont have those pieces and kind of strong onion flavor in the Risotto. Was a good Tip from a Michelin Star Chef in Rom for me and it works perfectly, give it a try.......Best wishes and you made a TOP cooking.....

Well wine in the firsrt Place leaves his complex acid and almost no flavor in the Risotto.... Love your recepie.......
