@Scoop763 Note that my videos are for a wide audience who may not know everything about Caribbean cuisine, thus the "talk too much" explanations. See that little X on the top right of your page, feel free to use it rather that complain. I love to talk and make to apologies for it.

I just made this for my West African husband today, though they call it Zobo. But I put fresh pineapple in with the sorrel and much more ginger. Then after it was strained I added drink crystals instead of sugar.....so yummy.

One of my favorite recipe from Caribbeanpot (Thanks Caribbeanpot). I am from Barbados and I love finding recipes that remind me of home. I am making this right now to be had with my Easter dinner. I added bay leaf to mine. I also let it steep overnight so that all the different ingredients get to blend together.

Try honey or agave instead of sugar. The best sorrel I've ever tried was at the NYC West Indian Labor Day parade and he sweetened it with honey instead of sugar. You could taste the flavor of everything he put in it w/o it being too sweet.

Yes, it's sometimes called hibiscus flowers. I guess they are from the same plant family as what is normally known as hibiscus. In Europe (especially Germany), sorrel is known as hibiscus and it's sold as a tea.

Got 3 Gallons of Sorrel i made sitting in my refrigerator. Sorrel after you make it can be really strong like its concentrated, so you may have to dilute it if its too strong to your liking. The strained leaves and ginger and such you can reuse with a little bit of water, not as much as the first time to reboil and get extra Sorrel juice from the leaves and then discard. But you get a bit more out the leaves than just discarding them the first time around.

Criss Howe he boiled his... Sorrel should not be boiled. Jamaicans say "draw" it. That means to boil the ginger ( and other spices if so desired)...add the sorrel to that water with the ginger, turn you stove off. Leave that for as long as 12 hours.. Strain and sweeten adding wine/ rum as desired.

I make this once a year.. okay maybe twice. So I always have to hear what Chris says about these Trini dishes so thank you Chris!! ❤ Just a couple notes: Here in Vancouver I could only manage to find sorrel (They call it Flor De Jamaica Hibiscus flower) from Mexico. Hope it works. They did suggest you wash it before using so I soaked and rinsed a couple times and there was a lot of dust. Hmm Love the suggestion Chris, to just add a bit of spice so it’s not overwhelming the flavour, 9 cups of water (that solved the mystery of how much water to use) and two cups of sugar. 👍 Sharing tonight at New Year’s party with my non Trini friends. Will see how they like it. Cheers!! 🎉🎉🎉
