Well that looks fantastic Ry, once again I've saved it! The sauce looks amazing for the burrito and for so many other dishes. I'll have to see if I can't find a hatch chili/chile hah cheese, that really sounds good. That was a seriously amazing cook!

Huge fan! Your videos always inspire me to start my own channel. Quick tip,toast your dried Chile’s after seeding em. It’ll enhance the flavor of the Chile’s even more. Do so before hydrating and fry the onions and garlic. No steaming. Then blend. Keep up he great videos

That's my kind of burrito bro. Not matter what I order when I got a Mexican restaurant I always ask for there red sauce. You need to bottle some of it and send it over to NC. Skirt steak is my all time favorite for things like this. Basting the outside and then getting that extra char puts it to that next level. Awesomeness!!!

Looked great Ry. Ironically I volunteered at my church carnival this Saturday and they put me on the grill BBQing carne asada, 150 pounds of it. Luckily I didn't have to cook it all. This is very creative! While canned beans are ok, homemade refried beans are so much better than canned, and very simple too! If you've never had charro beans, I highly recommend it. Maybe you can show how to smoke some hocks, and use them to make delicious porky beans!

How old is your weber kettle? I went to order the master touch 22" and started reading reviews was lots of complaints about the metal being thinner then used to be. And legs not made as good. Several people said lid didnt get a seal anymore cause was much lighter. Wanting to make a good purchase decision.

Mine is a couple years old. I use it usually 3 times a week at least and it's holding up well. Also, there's always going to be some leakage. I wouldn't worry about the lid seal. I've noticed no issues with mine.

Now, I'm hungry. I know a place to get 12" tortillas that would work great for making a masterpiece like that. Ry, I didn't know that you were a writer or a "space nut". My father-in-law actually machined the housings for the Apollo flashlights (and, no, he didn't work at ACS). They were made in a small shop outside of Camden, Michigan called Hukill Tool. I think my mother-in-law still has one of the extras.

You could also make a smothered burrito with the leftover sauce. Add garlic, cumin and water to thin it out a bit. Top the burrito with that and cheese and throw it under the broiler. Great idea on the grilled burrito sir.
