Rookie question - Is the crab meat already cooked or is there a specific temperature range to reach? Also where did you get your meat in Wichita? I am also not close to the ocean and don't want nasty crab meat.

Crab is always fully cooked when you buy it. Usually steamed. otherwise it comes out of the crab as a slimy goo instead of flaky meat.

Try putting a few drops of very old balsamic vinegar, 100 years or older, and some old bay on top. You'll think you're in Maryland eating the best crab cakes in the world.

Great job chef. How about pairing up fried, or roasted, green tomatoes with the crab cakes to create an appetizer tower with several alternating layers ? I have tried this at home but something is lacking in the flavor profile.

Hi Chef, respectfully: you can't call your sauce "Aïoli" , just because Aïoli comes from old southern french (like occitan, provençal...) translation of Aïl (garlic), and it's basically an emulsion of two ingredients: olive oil and... garlic :) and there's just no garlic in your sauce anyway, gonna try this this WE best regards fred, Belgian fan

Absolutely love your channel and this recipe brother, but a proper Aioli is a garlic mayo base which I didn't see any garlic added to this one. If you're just using the term as a buzzword for marketing, no worries..... but masters and more perceptive students of the culinary arts will catch this oversight.

The original allioli, is NOT made with eggs nor lemon... the word allioli is from the catalans word (ALL i OLI) (GARLIC & OIL) is no more than that to produce a tasty element... salutations from Spain and keep up the good work,
