Out of all the cooking shows, this has to be the best bar none. Sam is a character, a kind of guy you can kick it with, and he makes food that well could make easily and most likely want to eat as well. Keep doing a great job and keep those videos coming.

I believe the white fluffy parts in melted butter are milk solids and not fats. Clarified butter is pure fat and has a much higher smoke point that whole melted butter as the milk solids are subject to easily burning (they include the lactose/sugar) and is actually how browned butter is created. Indian Ghee is basically butter with no milk solids or clarified butter.

The white in butter is milk protein not fat, fat melt, milk protein burns. That's why ghee (clarified butter) can be used in higher temperature than regular butter.

This is the comment I came looking for, thank you. The white part is what eventually turns into the brown bits that drop to the bottom of the pan when you clarify butter. Clarified butter is almost 100% butter fat. It's the good shit.

Sam, Corn Silk has been used in Mexico and Latin America for hundreds of years as a natural cure for urinary tract infection. Just take the corn silk, fresh or dry and steep it just like tea, let cool then drink. Great show!!!

Hey Sam. Love the videos. Just a couple tips my dad taught me who worked in produce for years. To buy good ears of corn don't by any that have been attempted to be opened previously. Some people think that peeling the husk back to look at the corn is going to tell if the ear is good. All that does is dry it out. The best way to buy corn in the husk is to feel for firmness from bottom to top. Any part of the ear that's, not firm, pass on it. 2nd tip. For perfect corn run 1-5 ears under the water in a sink for a few seconds, then place in the microwave for 5-7 mins. After the timer goes off, cut the fat end of the ear of corn and squeeze the thin end. The corn will easily come out and you will have ZERO hucks left on the ear. Anyways, you've helped me out in a lot of your videos, thought maybe I could return the favor or for someone else to try if you really love the half shucked corn. Keep up the great videos!

This is one of my favorite things to make during the summer! Only thing I do different is a 50/50 mix of sour cream and Mayo. It makes the texture a little more creamy, and you get that tang from the sour cream!

I know I'm late, but blame YT suggestions and the way to actually make this being: peel corn, slather in mayo, roll in tajin (ground chili/lime crystals), caramelize the hell out of it till you think it's burnt to shit but try to keep the mayo/lime/chili blackened crust on it when you're stacking them...it's done when you think you might have just overdone it. :-) Thanks for the content bro and glad to have found you! Just as a different point of view, I actually treat my children as humans. And they are allowed to watch content with swearing, without seeing these words used in context they will never learn to read the additional emphasis that the words create when some people use them. They know not to use them around people, and they know that they are allowed to use them with their friends in private. I will never understand why some parents try to censor the world from their children as if that will somehow stop them from learning to sware. They are going to do it, teach them the right way.

You can put the corn straight in the microwave husk and all for 3 min and it comes out perfect every time. It also makes it easier to get all the silk off.

Southern tip for the corn. Buy the ones in the whole husk. Place the whole thing in the microwave with a damp paper towel. Heat for about 3 minutes per ear. Cut the bottom end off after it’s cooked and hold by the top and shake the corn out. Careful it will be hot. It steams in the husk, no plastic and hardy any of the silk sticks to the corn.
