Recipe for anyone that wants an easy to follow guide: Ingredients: 2 pounds of frozen corn 3/4 pound of bacon, chopped Tequila Lime seasoning Chunky garlic paste Fresh chopped cilantro Mexican grating cheese (queso fresco or cotija) Cheddar Jalapeno Cheetos Crema (Mexican table cream) Lime wedges Instructions: Heat the Blackstone Griddle to high heat. Cook the chopped bacon on the griddle until it's 80-90% done. Once the bacon is nearly cooked, add the frozen corn to the griddle and mix it with the bacon. Sprinkle the Tequila Lime seasoning and chunky garlic paste over the corn and bacon mixture. Add fresh chopped cilantro to the mixture and mix well. Continue cooking the mixture until everything is fully cooked, stirring occasionally. Serve the corn and bacon mixture in a bowl or serving cup. Top with the Mexican grating cheese, Cheddar Jalapeno Cheetos, and a drizzle of crema. Serve with a wedge of lime on the side. Enjoy!

I love your recipe for bacon fried corn. My family has been cooking fried corn for at least 5 generations. We always used bacon grease as well as butter and chopped onion. I had never thought of cooking the bacon (with) the corn. We do season with garlic, granulated onion, maybe a bit of thyme, as well as salt and pepper of course. A bit of paprika works well along with just a bit of chipotle to give it a kick. Your own taste will take you where you need to go with the seasoning. Paring the diced bacon with the corn though, that's a marriage made in heaven. Thank you for opening my mind and taking my fried corn to a stratospheric level!

In south Louisiana, we have our own corn dish called maque choux (mock-shoe). It is corn sautéed in bacon grease, it has the south Louisiana holy trinity (onion, celery, bell pepper), garlic, thyme, peppery spices and finished with a bit of cream. It’s usually a side dish. It can also be made into a main meal you can serve over white rice and if it’s made into a meal it can be made with chicken in it and things like andouille sausage or tasso ham. It can even be a seafood version and have shrimp in it. Some recipes have tomatoes in it while others don’t. It’s unrelated to the corn dishes in Texas, it’s pure south Louisiana.

Im from the West Coast. We eat elote (on the cob) with mayo, cheese and tajín, and what you’re doing is a take on esquite (off the cob). I’ve never had it with bacon….looks delicious.

I've not ever heard of this but it is close to my mexican street corn...kind of. Your take on this looks delicious 😋. I would suggest a sprinkle of chopped Cilantro at the end for color and taste. Cooking Cilantro changes the flavor to me. Also, only squeeze lime 1 time to keep the bitter taste out. Thanks for what you do, teaching us and giving us ideas....

Southwest born and raised here. The stage where the corn is in the molcajete add the crema at that point and mix it in. So most of the corn has a little on there and you don't run out after a few bites. It is great. Don't have crema then add some mayonnaise and that is good too.

If and when you come to New Mexico, you should find Hatch, where the best chile in the word is grown, and visit some of the guys who grow that. I figured you must have burned your mouth with that one big bite out of the bowl... quick cut to drinking grapefruit soda. We moved last February (during Texas's snow storm and power outage) and have been so busy since, have just today unveiled the Blackstone. Bacon fried corn was given to me as a child by my southern mother, that's right...it's a southern thing that also includes onions. You can deglaze your cast iron skillet with a little white wine. Delicious. It's best with fresh corn off the cobb.

I use my 17inch more than I use any of my other cooking gear. People are always commenting when I am cooking. I tell everyone Blackstone griddles are better than any grill. My son-in-law is going to buy one for his home. He said the food is much better than a regular grill. I always say being regular is boring. I will never go back to a grill. You'll see lots and lots and lots of the corn videos. I've used the mayo before but prefer it on the full-cob elote. I didn't like it in the street corn version you see here. I prefer straight crema. fun fact, crema is what is supposed to be used mayo is used in place of crema in the cob version (elote) because of its consistency so it doesn't run down and fall off while eating and as a binder for the cheese and Chile to stick to the corn.

Forgive me please!!! The "Cacique Crema Salvadorena" is by far the best flavored crema you should try. The flavor in my opinion is almost 10X better. It's the same brand you're using and it's so much more amazing. It is the Cacique brand but has the blue screw top lid. It may be harder to find but it's worth it!!!

Onion goes with everything especially bacon, as in bacon onion jam, and it goes well with corn so it's just a natural that it would go well with this. I would throw it in there between frying the bacon and adding the corn so the onion gets to caramelize a bit before adding the corn. Maybe it's just me but I think a bit of caramelized onion or maybe a bit of chopped green onion (scallions) would take this dish over the top!

I like to take bacon grease and apply directly to ears of corn on the grill. The result is really something good.

man yall white boys in the comments are missing out(i assume cause of what i've seen in the comments lol). look up elotes. its basically what it is. its mexican corn in a cup with mayonnaise, seasoned with chili powder, fresh lime juice, sprinkled all over with salty Cotija cheese and cilantro. also added on top with some sort of mexican hot sauce or chamoy.

Those tubes of garlic are amazing. Our Wal-Mart carries those, the ginger one, and a few others. They used to carry that brand's Basil paste, and it was crucial to good pasta sauce. Now having to use another brand that isn't as finely ground.
