broiling is an excellent way to cook meats/fish. it is essentially upside down grilling with a clean heat source, i did steaks this way for years with amazing results.

Hi Kent, if you have any wine or beer on hand, by soaking your skewers in that, it adds another great flavour to the food. I keep an empty glass bottle and lid with my outdoor kitchen to make sure that I am able to flavour my skewers. Works fantastic with the delicate flesh fish or even chicken. I’m impressed with yours and Shannon’s ongoing work. Keep it up.

I lived in this drought stricken country for 50 plus years and I have heard a lot of prayers for rain in my time, so when ii pray now for rain I ask God to send a little water this way so it can heal this dry parched country side, to make it beautiful and green as if was when he first made it. I lift my prayers to all those affected by these fires and ask the goodLord to heal this scared land that the fire has darkened. Ok ......Today I did Kent’s shrimp after marinating overnight as instructed....not only that , decided to make the shrimp with his salmon recipe ....OH MY , both recipes were awesome .... if you like shrimp try his recipe out ....first time I ever used chipotle in Adobe sauce .....opened the can and took a sniff.... to me it smelled like a very heavily smoked bbq sauce and on the shrimp WOW, it compliments the shrimp perfectly ..... not a piece a salmon was left and not a shrimp could be found ....Thank You Mr Rollins for the great recipes .... this one was knocked outta the park ....

I may have to bring you some jumbo jumbo x- large Gulf Shrimp ..... about as big as your palm ...I think one skewer will hold maybe two shrimp... I learned years ago ... they have to be grilled , if you fry them ...the dogs get em ... ( Beagle would love them )they end up “jerky shrimp”

I've found a flat metal grilling basket handy for cooking shrimp and other small things. Works well for most veggies (like spargus) too. Turn everything at once. Nice video. Thanks.

I learned a little tip from Elton Brown years ago. If you are using something hot like the chipotle peppers, or hot sauce for wings, or whatever, I like to add just a little bit of melted butter to the sauce to bring the heat down. There is something where the oils in the butter bond with the oils from the peppers and cuts the heat. I love those chipotle peppers in adobe sauce, but its just a tad too hot for me usually so I can use a little butter to make it enjoyable.

Those look awesome! Have you ever made Iowa Pigtails? Get a boneless pork loin remove the fat, cut into strips about the size of a large hot dog. Wrap a slice of bacon around it and slide it onto a skewer and grill them up. You can leave them plain or add spices. We love em!

I just watched you grilling shrimp on old birtha looked so good only thing I do different is wrap bacon around shrimp and when we went camping i put my Dutch oven on a grill one of those little small ones because I had trouble cooking on ground food burned on bottom and hay i would be tempted to go fishing in that place behind your camp.

If you make a little extra of the marinade and set it aside when you're getting things together, thin it out with a half and half mix of butter and olive oil with some more garlic in a pan, make some of your favorite pasta, you can mix it all together for a really good dinner.
