This week on Basics, I partnered with ACE Hardware to take a look at America's real favorite pastime: grilling. I'll show you how to make fiery fare that is more exciting than the usual burgers and dogs.

Grocery List:
For the kebabs:
1 medium onion
6 medium garlic cloves
Finely grated zest from 1 lemon
2 Tbsp chopped fresh rosemary
1/3 cup beef broth
1/3 cup vegetable oil
3 Tbsp tomato paste
2 tsp table salt
1 1/2 tsp sugar
3/4 tsp black pepper
2 lbs sirloin steak tips, cut into 2-inch chunks
1 large zucchini
1 large red bell pepper
1 large green bell pepper
1 large red onion
For the stuffed pork tenderloin
4 tsp dark brown sugar
2 1/4 tsp kosher salt
1 1/4 tsp pepper
2 (1 1/2 lb) pork tenderloins
1 cup baby spinach
2 Tbsp olive oil
1 slice hearty white sandwich bread
3/4 cup piquillo peppers
2 ounces Manchego cheese
1/4 cup toasted pine nuts
2 garlic cloves
1 tsp fresh thyme
1/2 tsp smoked paprika
For the sausages:
Whatever raw sausages you have available at your grocery store or local butcher
For the chicken wings
12-18 chicken wings
2 cups BBQ sauce (your favorite brand or homemade)
Special equipment:
Food processor or blender
Skewers for meat and veggie kebabs
Butcher's twine
Meat thermometer
Grill tools (spatula, tongs, etc)
Grill and/or wood-fired grill or smoker

I don't like these product placements. They leave a bad taste in my mouth. Fortunately, I'll be using my Weber Genesis II e-310 Propane Grill later to cook perfect steak and vegetable kebabs. Its precision grilling never leaves a bad taste.

Protip: get flat skewers and you don't have the problem where when you turn the skewer everything just spins and doesn't actually turn.

Aybak C. There's a very niche channel called Steve1989MREInfo and he reviews miltary MRE's from all eras from all countries, he'll after unboxing get out everything on a tray and while doing so say "Alright now let's yet this out onto a tray, nice!" exactly the way Babish said it. He'll even taste the food if it's edible as some stuff isn't, like Vietnam mres and anything father back...

See, my only problem with the way this series (Basics) is going is that I feel like it's really starting to get away from basics, and just be a cooking show. There's SO MUCH about grilling that's barely touched on here, and I mean basics. Sure, talking about direct and indirect heat and stuff is great, but he does nothing with charcoal, and I think that's a hell of a lot more "mysterious" than gas is. Anyone who knows how to use a stove can pretty much work a gas grill. I feel like a show called "Basics" about grilling should talk about applying heat but ALSO talk about cooking all those basic grill faire correctly. There's a big gulf between frozen patties cooked to hell on an overhot grill with uneven heat compared to fresh ground or blended patties cooked the right way. I think that would have been a lot more useful. Hell, 1 minute on how to grill different kinds of sausages would have been fantastic.

Max Bernhardt you honestly contradict yourself in the complaint, charcoal is not a basic, you said so yourself when you complained about how "mysterious" it is, this show is about basics and a charcoal grill in concept is more complicated than basic because of things like uneven heating and changing temperatures over time

Charcoal grill is basic in the sense everyone can have it for cheap because all you need is charcoal and a wire rack so that is the first choice for many begginers.

+Jacklynn Rodriguez He makes more than $10k/month via Patreon, not to mention anything he gets from KZbin for views. Even if you assume a full half of that is going to taxes (although it's likely he's paying closer to 15-20% if he can file all of that money as self-employment income), that's more than $60k/year. There are also far less intrusive ways of doing ads and sponsorships that don't derail the video. I don't generally mind product placement, but this wound up being less about grilling and technique than it was about Ace Hardware and the grill.

For those using charcoal this is the same filling half the tray with charcoal and half not. Light the coals using your desired method then go grab a drink. The thing most people do wrong is cook when there are flames but all that does is burn the outsides and cook it all wrong! Instead you want the coals with no flames as this gives a more even heat. It is actually better to use wood once it is going as this gives a slwoer burn. Try some flavoured woods and you can have a hickery steak. Once the you have flames the fuel is fully ignited and will go through several stages of cooling. Each stage of heat lasts about 8 to 12 minutes, but a few tricks can extend the time. A fire built with hardwood will cool more slowly. A large, thick bed of coals will hold its heat better than a small or sparse bed. Covering a kettle-type grill will slow the burning, or cooling, of the fire (leave the bottom vents open a bit to keep the fire going). Without a cover, a good-size fire will remain hot enough to cook on for 30 to 45 minutes, although it will be cooling gradually; covering the grill will extend this time to an hour. How hot is your grill? To test the heat, hold your outstretched palm an inch or two above the cooking grate. The length of time you can stand the heat tells you how hot the grill is. The same test can be used for gas grills. Time palm can be held over grill / Grill heat / Temperature range You lost your hand / You didnt wait until the flames died down / Who cares, go to the ER less than 1 second / very hot / over 600°F 1 to 2 seconds / hot / 400° to 500°F 3 to 4 seconds / medium / 350° to 375°F 5 to 7 seconds / medium-low / 325° to 350°F

What kind of outdoor grill doesn't have a lid? Unless you have a cast iron skillet pan to be used over a range or a camp fire. If that's the case your "lid" is a length of tinfoil or a lid that spans the length of your skillet pan. Be careful of setting your fire alarms off if you live in an apartment though! If you bought a grill (charcoal or otherwise) without a lid you either live outside the US where this is potentially an option or you bought an overpriced grill without every component.

I agree, coal is the way to go for grilling, but apparently, many americans use these huge high-tech gas or even electric grills. Traditional coal or campfire grilling seems to have fallen out of popularity in many places. I guess it's a prestige thing, as in "I can afford this expensive high tech grill instead of using a cheap coal grill." This kind of mentality is pretty common in the US.
