the translation is very off on this..the steamed tofu w/ fermented black beans/red chili pepper is steamed for 5 hours, not 5 mins.....where they also left out: type of tofu (hard, medium or soft?), type of red chili pepper (what region it came from), and most important, type of black beans (how long fermented, where black beans came from, what region)

Translation could be done via google translate, which is never accurate to the point. At least there are English subtitles on this documentary, as it inclusive for the people that cannot understand Cantonese. I’m glad I can understand Cantonese , love watching documentaries on Cantonese cuisine 🙂

省港澳是回归前香港的視角,粤港澳是回归后权力上上头的視角,開放后大量外省人外省饮食文化进入廣東,传統廣東便是老廣,粤東客家和潮汕自成一派,粤西粤北沒什麼影響力,這老廣更多是珠三角。
