I think Jesse thought it was too risky and that he could have been found out. He didn't have an opening because Jesse was going to eat from the same pot that Gus was preparing in the beginning. It's most likely that Jesse didn't have a safe opening to use the ricin.

The point I am trying to get at is respect is not given it is earned. And while granted someone might indeed have and be accorded a certain level of respect, given the position they hold, that does not mean they should be or have earned respect as a person. Take, for example, Tiberius Caesar of Rome, the 3rd Caesar in Rome's history, and who was also Caesar during the time of Christ. His position accorded him respect, but when you look at his personal life, and this man was a straight up pervert, who involved children in his sexual escapades, I doubt anyone would say he was a man who commanded respect based on the type of man he was. Again the point is, just because someone may command respect due to their position, that doesn't mean they are respectable as a man or woman.

Jesse pressed Gus like no one else could during 1:52-2:02 Jesse asserts he is ''matter of fact''. Not beating around the bush. Jesse is even more blunt than Gus usually is, he and the viewer loses their footing. We expect Gustavo Fring to be in control, yet this ''useless junkie'' hands him his ass. 2:26 is when Gus asks something of Jesse, that runs parallel to Walt saying ''I would never ask that of you''. They are speaking the same language, they understand the words, but they are playing an entirely different game.

Notice the difference in Gus’s act between both Walter and Jesse, when Walter comes over Gus had kids toys strewn around his house to help portray himself as a family man which are absent during Jesse’s visit. When Walter visits he asks him to cut the garlic showing trust, when Jesse visits Gus is the one cutting the garlic The whole dinner song and dance is just an act, there’s zero chance that this is Gus’s real house. I’d be surprised if there wasn’t armed men outside with their sights aimed on Jesse the whole time
