Crispy outside, soft inside: The Amritsari Kulcha magic. ✨
AMRITSARI KULCHA
INGREDIENTS
FOR DOUGH:
• ½ cup maida
• ½ cup wheat flour
• ¼ tsp baking powder
• ¼ tsp baking soda
• Salt as per taste
• 2 tbsp ghee
• ¼ cup curd
• Water as required
• 1 tsp Oil
METHOD:
• In a mixing bowl, add maida, wheat flour, baking powder, baking soda,salt,ghee,curd,Combine this all well.
• Further add water and knead a soft dough.
• Spread oil and prepare soft dough.
• Cover and rest the dough for 30 minutes.
FOR THE PARATHA STUFFING:
• ½ Tbsp Coriander seeds
• 1 Tbsp Cumin seeds
• 2 nos. Potatoes (boiled)
• 1 Tbsp pripad Corander & cumin mixture
• 2-3nos Green chillies (chopped)
• ½ nos. onion (chopped)
• 2 Tbsp Fresh coriander (chopped)
• ½ Tsp Dry mango powder
• Salt to taste
METHOD:
• Take a mortar pestle add corainder seeds & cumin seeds further crush them coarsely and keep aside to be used in making the kulcha filling.
• Take a bowl in that add potatoes,prepare coriander &cumin mixture green chillies, onion, coriander, amchur powder and salt. Mix all this well.
• Now to make Amrisari kulcha, take a small portion of dough, make a cup, fill the prepared stuffing, seal the dough. Roll into paratha.
• Stick some coriander leaves, sprinkle red chilli powder.
• Lift the kulcha apply water on other side and place the kulcha on hot tawa.
• Cook it for 10-15 seconds on high flame.
• Further lift the tawa, flip & hold it over direct flame & cook until the kulcha becomes light golden brown & crisp from the top, make sure you keep rotating the tawa over the flame so that the kulcha cooks evenly.
• Once cooked remove the kulcha from the tawa using a spatula & place it onto a plate, apply melted butter over it.
FOR IMLI ONION CHUTNEY:
• ¼ Cup Soaked Imli
• Water
• ½ Cup Onions (chopped)
• 1-2no Green Chillies (chopped)
• ½ Inch Ginger (chopped)
• ½ Cup Potatoes (boiled)
• 1 Tsp Black Salt
• 1 Tsp Cumin powder
• 1 Tsp Sugar Powder
• 2 Tbsp Fresh coriander (chopped)
• 2 Tbsp Mint leaves (chopped)
• 1 Tsp Red Chilli Powder
METHOD:
• Use a sieve and strain the soaked tamarind to extract its pulp, mix water and tamarind pulp along with onions, green chillies,ginger,potatoes, black salt,cumin powder, sugar powder, coriander, mint leaves, red chilli powder.. Mix this all well and serve the chutney with Amritsari kulcha and enjoy.
