halal butcher exposed by big Youtuber Auditing Britain

I follow Auditing Britain and watch his content , as auditors are recording contemporary life in the UK as well as testing authority reactions to the legal past time of photography and enforcing our rights .
This particular video caught my attention as the practices being employed here seemed very dangerous to public health . And the questions it raises are numerous .
This is halal meat production so are these practices rife in this particular branch of the industry which is carried out under Islamic guidelines ?
Or is this rife in smaller halal companies that are struggling to make money on tight margins ?
Or is this rife throughout the meat industry who are all struggling to keep their prices low ?
Or is this simply a rogue business who think they can get away with this ?
