Thank you for this clear and detailed explanation of the rice cooking process. Most chefs don't explain this clearly. I always have problems getting basmati rice to come out separate. Even when i soak it for 30-60 minutes the rice comes out sticky and stuck together. When I don't soak it it still comes out sticky. When i reduce the water during cooking it comes out undercooked! 😢 I'm going to try your recipe with Sella Basmati and will follow your instructions closely! Your biryani looks delicious!!

Walaykum asalam, add them when spices are added just after tomatoes. Ensure they are done but should still have some resistance, as they will be steamed along with the rice
