Elizabeth Hatfield double is heavy cream- many places only sell heavy whipping cream which is the same. Single cream is a cream with less butterfat. I’m not 100% sure but it’s the cream used in coffee- half and half.

I always love seeing you working with kids. It's important to pass down knowledge to our little ones, it is amazing how many adults I've met that have know idea what to do in a kitchen from cooking to washing dishes! But along with the knowledge, it had to be nurtured and encouraged, and you do that so beautifully. I love seeing how your kids each have their own identity and personality that transfers into who they are and what they make in the kitchen. I feel like I've seen the boys absorb more eagerly from you where as the girls are more cheeky and insistent on their independence and strength, their confidence that they don't need help from dad. It's all good!

Aisha Khatib You've never seen "gordon ramsays boiling point" have you? the whole series is on youtube this was when he had just opened his own restaurant and going for his 3rd star all his chefs are qualified and he is BRUTAL far more intense than the way he behaves in hells kitchen id recommend checking it out its a bit of an insight to what hes really like really interesting if your interested in kitchens and cooking in general.

It is so simple, but the way he teaches/shows them how to do, will make them better cooks than 90% of the world population without even thinking about it. It seems so simple, but the smell first, then let them smell to understand principle is so strong that they aren't going to forget how to make simple quick food if they want to.

When I tried to make them, I couldn't use actual double cream, but I got pasteurized heavy cream instead and it never firmed up enough to shape. It was too thin, but still really good. Kinda like thick chocolate pudding. The mint flavor is perfect. I just don't know if it was the lack of double cream that did it or did I just not do it right. I followed a recipe that I found online. I wish he had specified in this video how much to use of each ingredient.

Ramsay, I made these last night and they turned out perfect! I switched things up by using a juicer to get all the juice out of the mint leaves, and I was going to add that directly to the chocolate. I also froze them after balling them and used dipping chocolate to coat the outside. I'm never going to buy another box of chocolates again.

Double Cream is the English/Canadian way of saying Heavy Cream, its 35% if your looking for the specific Milk fat content.

For the butter is it salted or unsalted? And can i use semi-sweet chocolate instead of bittersweet?

David Yen it doesnt really matter for both questions. for the butter, its best to use unsalted so that u cud add salt at ur own preference. (salt brings out the chocolate flavor just a tiny bit so maybe if u use unsalted use 1/4 tsp). salted is fine too but u cant control how much salt is added. semi sweet will just make the truffles sweeter.

May I ask for how to make a chocolate bar with different flavors? Like mint , fruit or vanilla instead of adding flavor to the chocolate mixture (like be ganache), I just give different flavors to the melted chocolate. Can it only be achieved by adding oil based flavoring or powder?
