sorry i'm from Egypt and i didn't understand what does 180" mean .. we use meter measurement .. and i wonder if i can use this in Gym for hand wrap , elbow wrap and knee wrap

These aren’t used for knee or elbow wraps, they’re specifically for your hands.

i believe wrist support is more important then knuckle protection

Depending on the person some people have weak wrists some weak knuckles having the ability to put more protection on the area that needs it is important but in pro boxing they put more protection on knuckles expecting you to have strong wrists at that level

The Velcro always goes the wrong way on my right hand💀🤦🏼‍♂️

You could be folding the wrap as you go or starting with the wrap upside-down do you have "this side down" text on your wraps? If not you can also tell from the stitching
