So i made this recipe once already following it mostly to a tee (couldn't find the spanish spice in my store, had about double the meat, etc) and it still turned out very delicious. Especially the beans, they were honestly my favorite part lol! Remaking it this week with beef instead since pork isn't my preferred, and am very excited for the end result knowing how good the first try turned out. Definitely easy and hands off for anyone looking for a filling and big meal for a family (or many many leftovers).

This is the only way I will ever make pork and beans for the rest of my life. I followed the recipe pretty much to a T (which I never do) and it was delicious, spicy and with the right amount of fat. I had a lot of beans left after the pork and we finished those with soft boiled eggs the next days. It was just so good. Want to make it again in the next few weeks, which is a big deal because I don't usually repeat meals for months usually.

Made this tonight and it was excellent! Even though I only let the pork shoulder sit with seasoning for 30 minutes instead of the 12 hours the recipe calls for, still worth doing. I’ve slow cooked a lot of pork shoulder, pork butt, picnic pork in my life and this was the best. The presentation was definitely a step up from the mess of (delicious) pulled pork I usually end up with. Will definitely make again but for now I am looking forward to the leftovers.

Made it again for New Year's Day dinner and while the beans were delicious, the pork skin was crispy, whole sections of the pork were pretty dried out and needed a lot of the leftover pot likker to rebalance. What I did differently was a) let the shoulder sit in the fridge uncovered with spice rub for 16 hours b) used a pressure cooker instead of slow cooking (1:10 for a 5lb shoulder) c) 45 minutes in the oven at 375, on a sheet pan, possibly not enough pot likker in the pan I can salvage the roast but next time I think I'll cut back on the secondary cooking.

Just made this and omg is it good. Couple changes. I didn’t have basque chilis. I had cayenne and not hot smoked paprika. So I substituted Calabrian chili in olive oil. It was a moist (1) rub. Second thing is I added some ham based bouillon. It added a depth of flavor that was missing in the beans. Third, I used an immersion blender. Worked perfectly. I have a mix of smooth and creamy bean and some chunky bean. The pork was shreddy from the Dutch oven. So moist. (2). Crisping in the oven as we speak. One thing I didn’t expect was the touch of sweetness of the beans. It’s just enough of the natural sweetness of the bean and not that molasses and brown sugar syrup sweetness. Bravo! I love it.

It did-it was a sliver from the blade part of the shoulder. Just depends where they cut the roast from-this is like 1/3 of a whole butt/shoulder so it will vary 👍
