It is best to soak mushrooms for at least 3 hours. That way mushrooms are softened to a nicer degree.

I like Happy Moi's cooking because she always cooks with simple ingredients that are available in all Asian moms' homes. Also, her simple recipe lets viewers enjoy the pure flavors of meat, fish, and vegetables. I think all chefs should learn to cook like Happy Moi and go back to the basics instead of over-complicating a dish that, unfortunately, covered all the original flavors of food.
