Harry my friend, that flambe was something! Copied it myself tonight, along with the beans and added some corn wagon wheels done in the wok and big-ass mushies stuffed with crispy bacon/cheese/garlic/onion and smoked with red wine barrel chunks. Dude! Restaurant quality recipe there man, very well done!

Nice,recipe. I’ve been doing it for years. Only differences being I add the green peppercorns when I add the shallots, and let the stock reduce which means you get a thicker sauce without having to cheat and add cornflour or flour.
