Recipe:
Serves 4
Prep time 20 min
Total time 30 min
Chicken brine:
• 1kg or 8 chicken tenderloins
• 500ml buttermilk
• 2 tbspn cooking/kosher salt
Flour mix (I recommend pre-mixing this at home)
• 1.5 cups self-raising flour (no issue using gluten-free flour)
• 1/2 cup cornflour
• 1/2 tbspn thyme
• 1/2 tbspn basil
• 1/3 tbspn oregano
• 1 tbspn celery salt
• 1 tbspn black pepper
• 1 tbspn dry mustard
• 1 tbspn cumin
• 4 tbspn paprika
• 1 tbspn garlic salt
• 3 tbspn white pepper
• 1/2 tbspn MSG (or 2/3 tbspn salt)
Burger ingredients
• 4 potato buns
• ½ red onion sliced to rings
• 2 tbspn red wine vinegar
• Salt and pepper
• ¼ of a red cabbage sliced finely
• 6 dill pickles, sliced
• Egg mayonnaise
• Spicy sweet chilli sauce or chilli jam
Directions:
• Place the red onion and sliced pickles in a bowl with some salt, pepper and red wine vinegar and leave for at least 15 minutes (there is no maximum, they are great a week later).
• Heat the oil to 180deg in a wok or camp oven.
• Remove the chicken from the buttermilk and drop immediately in the flour mix - don’t let the buttermilk drain off, the more the merrier.
• Ensure the chicken is thoroughly coated in flour, especially in any cracks. The messier, the crispier.
• Carefully place the chicken in the oil 2 pieces at a time and fry until golden brown, this should take around 6 minutes. Let the chicken rest for 2-3 min and ensure the internal temperature is above 65 degrees (use a meat thermometer). If it isn’t hot enough, put it back in the hot oil for 45 sec- 1 min.
• Toast the inside of your buns over the fire, then build your burger in the following order: base of the bun, 2 chicken tenderloins, red cabbage, pickles, red onion, generous squeeze of egg mayo, sweet chilli to taste, top bun.

I apologise for the big delay with cooking vids everyone. Finishing the book put me weeks behind the 8 ball, so I have been off intensively filming for a few weeks so I finally have plenty of fresh content to edit and I'll be posting regular cooking vids from now on! (I also have another VLOG and a Prado ep in the bank)

I worked at KFC through highschool a million years ago. The "secret" herbs n spices are listed on the bag they use when mixing up the breading. I think there was actually 14 from memory. Inc msg. Just not the ratios. I had them written down and trialing ratios back in 1990 haha.

Great vid with my two heroes. Missed your vids since the Colonial pig roast. Bought the two knives from Ozbrai after I saw them at Colonial. I see you mostly use the cleaver style one. Do you ever use the chef's knife. By the way the burger looked delicious. Love to see more with you and Ronny.

Back to basic camp fire cooking but uses internal temps to cook chicken and oil temp to cook fries, keep it simple and wing I say

Mate love the channel and content you put out. My best tip with fried chicken is to double dip and repeat the crumbing process. You have to be quick but well worth the extra crispy bits.

Did frozen chips twice the cold oil method, first time they were brilliant with every one being crunchy. The second time I couldn’t get the oil hot enough and they were like cardboard. It does work...50% of the time

I know this video is almost half a year old Harry, but I just came across this and there came a question to my mind again I had a few times watching you cooking: what do you do with all the excessive oil after frying?

It depends. If it’s the oil from chips, I’ll always keep it and filter it back in the bottle, but the chicken oil is single use for me. If it’s a popular campsite I’ll take it with me, if not I’ll dig a hole and pour it in- it’s vegetable oil so it degrades very quickly and has no negative impacts.

Harry I've been doing the cold oil fries since I heard about it and I use frozen shoe string fries and they always come out perfectly crispy but I have found if you use larger frozen chips they do indeed not get as crispy/soggyish Loving the videos mate 👌 great seeing you and Ronny together great combo.
