One of our viewers asked what we eat in a day, so we decided to answer the question by making a video. I found a integrative cardiologist Dr Joel Khan and he advises vegan eating. I have lost weight, exercise daily and feel better now at 60 than in my forties. My fav dinner is pad Thai made with cabbage sliced like noodles, curry a bit of real peanut butter and coconut milk. So yummy!

We try not to be too evangaliastic about it, but eating a vegan diet has much a big difference to our overall health. Please share how you make your Pad Thai, it sounds delish! 😋

I went back to see if you replied to any of my comments. I think there is a way for you tube to notify the commenter if you respond? Anyway- I make it by chopping up any veggies I have, onions and very thinly sliced cabbage into “noodles”, one can of coconut milk, curry paste, I like red or green, and a dollop of peanut butter. Sometimes it’ll it with fresh cilantro, if I can get it, or crushed peanuts. That’s it. Simple. I have also seen people add Chick Peas.

To each his own. I've seen 2 of your videos and find your 'ultra-mimimalist' home and vegan diet just extreme. I like to keep things simple. But i believe in balance - uncluttered but comfortable home, and something like 'Mediterranean Diet' with some meat and fish and dairy but mostly veggies and fruits. Im 77. Also on a tight budget.

Sorry for the delayed response. It seems KZbin isn’t notifying us of all comments via email? We have to look into that. As for your thoughts, you’re so right. Balance is key. For us this is balanced, but for the next person it’s too extreme. That’s the beauty of living a simplified lifestyle. It’s different for everyone. I'm vegan too! Lately I've been eating yellow potatoes, broccoli and homemade "cheese" sauce for breakfast. I like that you call nooch, gold! I've also heard it called unicorn dust 😃 Thanks for the video! I hope you do more like this 💕

Hey Laura, glad you enjoyed the video. Your breakfast sounds super tasty but for lunch! I'm all about sweet breakfast options. Although Sporty might go for it...she's been known to enjoy the odd savory brekkie. 😁

Breakfast Nutrition: At about 4:30 AM, I begin with hypertensive medication and a full glass of purified water followed by 1 mug of chicken or turkey bone broth w/ ginger and tumeric and a pinch of REAL salt (contains trace minerals and no anti-caking agents), one or two cups of full-caffeine coffee w/raw cow's milk, and a lower-than-usual sugar content bran muffin. Subjectively, it seemed to improve my energy level, especially since I don't eat lunch till about 1:30 PM, though I really want to eat lunch at 11 AM but can't because as I high school English teacher, I must work until I'm told that I'm officially done and it's "lunchtime".

I love your videos. Thank you for all your hard work making them. I'm vegan and mostly wholefood apart from coffee and a (vegan) croissant in a local cafe once a week as a treat to look forward to. My favourite treat at home is "nice" cream which I have nearly every day - it's a mixture of frozen mango, cherries and blueberries, plant milk (I buy one that is made from soy and water only - no other ingredients), a pinch of cinnamon and nutmeg, and a teaspoon of vanilla extract whizzed up in my very cheap version of a Nutribullet - so simple, so quick and delicious 😋. I'm so glad you keep it real by referring to the occasional snack and as in one of your earlier videos you too both like a coffee and pastry sometimes. I'd like to see what you eat on the weekend. 🌱💚

It's an absolute pleasure! Especially if we get comments like this! "nice" cream sounds amazing, we must give it a whirl in Blendobi. The blender that is now part of our family and has a name 🤣 My (Sporty) favorite thing to eat is a vegan croissant but I can't get my paws onto any where we live. So sad! Weekend food and snack video on the list!

You're welcome! There's a time and place for pricier appliances (a high-powered blender, for example), but sometimes cheap and cheerful can do the trick. We've had ours for four years now and although it's looking a bit shabby, it still works like a bomb!

No wonder I’m over weight I eat cereal or 2 eggs for breakfast a slice of quiche for lunch or a sandwich and meat and veggie for dinner. I don’t snack . I almost did not want to confess what I eat. Now I know I can do better. I think I’m inspired watching you both.❤️❤️

There's always room for improvement when it comes to diet and lifestyle. Some days, what we eat is not that great either. But honestly, yours could be so much worse. It's not like you're eating drive-thru food every day, so don't be too hard on yourself! With food, we've found it's easier to add in more good stuff than it is to try and avoid the not-so-great stuff. For example, make a point of upping your veggie intake. That way, there won't be as much room for things like bread etc. Does that make sense? We're definitely not nutrition experts. This is just what's worked for us. Our best advice would be to check out the Blue Zones for inspiration and info: www.bluezones.com/recipes/food-guidelines/ 😃

Also plant based. Loving your videos. You two make me smile. Today was busy and I was on the go. I ate a little more vegan processed food than normal. Coffee with soy milk and stevia. Decaf Chai with soy milk and stevia. Tofu scramble with Nooch on whole grain toast with a bit if vegan butter. Also a piece of toast with 2 tsp vegan cream cheese and blueberries & a small bowl of grapefruit. 2 Brazil nuts. Lunch- on the road. I picked up small vegan sushi, a vegan protien bar, a banana, and a ginger lemon juice with a pinch of cayenne. Dinner- A plain sweet potato, roasted brussel sprouts, asparagus and broccoli. Evening snack- nice cream with banana, mango, and almond milk.

Wow Courtney that sounds pretty balanced considering you were on the road. The thing is, we can always offset the "too much of processed" days by doubling down on veggies etc. when we're at home. :)

How inspiring, thank you! I had forgotten about making sprouts and will start some today. My daily breakfast that I look forward to consists of oats, flax, chia, hemp, buckwheat and fruit. The protein powder is a good idea. You both come across so genuine and happy to share, thank you.

Thanks for the kind words! Your breakfast sounds delicious. What do you do with the buckwheat? We used to soak it overnight and blend it into a porridge and I know some people dehydrate it, but while it's tasty it's a big schlep. 😬🌻❤️

@@MostlyMindful Yes, I just cook the ground buckwheat (just a teaspoon) with the rest of the ingredients. It adds a little more texture and flavor dynamic. 😀

Thanks for sharing what you eat in a day. I’ve been vegan/plant based for around 8 years now and wish it was longer. For some reason though I’ve always struggled with eating oats though. Everyone seems to love them but for me ..not so much. I wouldn’t mind if you could do a clip about sprouting .

Such a pleasure! Thank you for watching 😍 If you're looking for a morning porridge substitute for oats, cococnut porridge works pretty well. It can be paired with almond flour for a more nutty flavor and then add ground flax seeds and/or psyllium husk to bind it a bit. We have added a sprouting video to our list x

you might try steel cut oats - healthier because it is whole grain. They have much more texture and flavor. I cook them 1 cup oats to two cups water so they are not soggy or watery, they are a good solid grain (similar to brown rice but stickier and make great sushi rolls). Great to add to yogurt and fruit, or add tamari for a great savory grain.

I have just switched to roasted buckwheat for grain item. I love my oyama all stainless steel rice cooker.

Aaah, yes. We also used to eat buckwheat some time back. We soaked it and then blended it with hot water to make a porridge. I don't think it was roasted. That must be tasty! 😋

Looks like you eat your breakfast cold. I make one pot of oats with other good things each week and heat up a portion each morning. That takes more pans to reheat. Ill try eating it cold. At least in summer.

We always soak oats overnight. We generally add some water in the morning so they're not too stodgy. In winter, we use boiling water. We've found that soaking raw oats overnight works better for digestion and keeps us full longer than cooking them. We also eat coconut porridge in winter, which is stupid easy to make: 3 tbs coconut flour, 1 tbs ground flax, scant tsp psyllium husk, and boiling water until you get the desired consistency. We also add 1-2 scoops of choc protein powder to the mix. Quick, hearty, tasty, and filling. Win!

I've been vegan for 20 plus years and was vegetarian for 20 years before that. Love seeing what other vegans eat!! I make oats with boiling water too! So nice not to hassle with a sticky pan. Loved seeing your sprouts, super nutritious and yummy. Breakfast - A green smoothie with nettles, romaine, apple, peach, banana and strawberry. Plus a bowl of whole oats with raisins, walnuts, blueberries, hot curry powder, chili flakes, raw cacao and nooch. Dinner- A sandwich with vegan mayo, Dijon mustard, onion, romaine, tomato, pickle, and air fried King Oyster Mushrooms marinated with olive oil, tamari, garlic and pepper. A side of seasoned air fried potatoes along with sliced cucumber and red pepper. Dessert - Apple with peanut butter Beverages- Gingerbrew Kombucha, Peppermint tea

@@MostlyMindful Both! I love spicy savory food. I also like to ramp up the nutritional value when I can. Nutritional yeast is fortified with B12, hot curry powder has turmeric and black pepper which help reduce chronic inflammation and pain, support joint and heart health. Nettles is a super food. I make stinging nettle infusions and drink 5 quarts weekly. I use it as a base for smoothies. And sprinkle in just about everything I make. It has more nutritional value than spirulina. I forage it and also grow it in my backyard. It's my plant ally.

I had a time eating mostly vegetarian, it didnt work very long. I feel I need some meat, not huge amounts to keep functioning well. It has to do with some genetic disfunction, and i am planning to switch slowly to a keto diet and see how it works.
