I am a self confessed chocolate addict. I made this brownie in the last week and it was AMAZING! Freezes so well and actually tastes better after a few days. I’ve now gone a record 5 days without store bought chocolate. 💪🏼This made a large brownie pan (8inch x 12inch) of chocolate goodness. I went with half the maple syrup in the brownie mix as the description comment suggests. I should note that I used a Magimix food processor and made my own almond butter first to add to the recipe. It was the biggest workout she’s contended with but it turned out great. I used two medium to large sweet potatoes (cooked for 40-50mins) and 1 large beetroot (but took a couple of spoonfuls out after grating it). It doughed up in the food processor a number of times and just kept breaking it up. Eventually it just doughed up fully but it was all thoroughly mixed so I started spreading it out and pushing it into a lined tin. As suggested I didn’t overwhisk the topping of coconut oil and cacao. I also used mum as ‘taste tester’. She gives VERY honest feedback (more often than not she does not love my ‘healthy’ sweet creations) but THIS WAS A HIT!! She was shocked that it tasted so incredible and was predominantly sweet potato, beetroot and cacao. This will be a regular item to keep in the freezer if it could ever last that long.

I baked the sweet potaoes, but yes, you can steam them. And the beetroot is raw.

just made this and super proud of myself. I'm so obsessed with your style and the passion you share with us for great food. Came across your videos on FMTV and I've been making some of your recipes for a couple of weeks now. Had a few friends over for dinner and everything was simple, plenty and an absolute success. In this one, the proportion of wet and dry ingredients didn't work for me as expected, based on the video (especially in the icing, I didn't get that shiny finish and it did not spread on top easily), but I figure I just need to get playful with it. much love from London. xx

i love your recipes sooo much and i'm trying to have a healthier life like you do, i don't eat meat and also any animal products and sugar. but you know sweet potato or coconout oil /flour kind of things are sooooo expensive in Turkey. As a student i don't know what to do, sometimes i'm thinking if i can make a brownie with boiled beans, flour, cocoa and banana; maybe add them to the food processor and with that way i can make the base of the brownie.. but i'm not sure. if you have a desert recipe which you use legumes can you share with us? :) 'cause you know in Turkey legumes are so cheap and i want to use them in almost everything :):) thank you in advence :)

Hey Cynthia, I made this today but my base was extremely moist, could it be from not letting the sweet potato cool down enough? It still tastes amazing tho :) but mine didn't turn out like a brownie texture.

I follow a similar recipe that uses oat flour and almond meal and is baked for 30 mins ! Try that

I just made this. The icing tasted powdery & a bit bitter & the brownie tastes a bot bitter to I used organic cacao powder. Doesn't look as dark as yours

I've tried this and it tastes great, but has the consistency of chocolate mouse? Any suggestions? I'm going to try and bake it?

Try not to bake it. Just add a little psyllium husk to the mix and it can absorb some of the moisture

Yes you can use the almond meal instead, you will need to add a tablespoon of pysllium as well so that it will still set.
