Tried this today for my 16 month old grandson. He had 3 pieces. Served it with some warmed up frozen mixed berries. My husband even tried a piece and really liked it. The rest of the pan is in the freezer. Thanks Brittany!

Yep, with baby coming, you need to stock your freezer for all the days to come when you're too tired to even think about cooking! I'm usually out the door in the morning to either my workout class at the Y or my line dance class. Eating on the go is a thing, LOL! And when we both had Covid in December, I was so thankful to have lots of leftover meals in the freezer! @@TheJaroudiFamily

Especially with frozen fruit you can cook it down and mash it in a pot. That will turn it into a jam/topping that you can either put on top or swirl into the batter

Is it 1-1/2 tsp or 1/2 tsp vanilla powder? Also, how does that translate to vanilla extract? Thank you, this looks awesome!

1/2 tsp - you could double it if using extract.

Maybe a dumb question, but since you let the batter sit anyway, is it really necessary to make the flax egg as a separate step instead of just incorporating into the batter with the required extra 6 TBS of water?? I am supremely lazy when it comes to cooking nightly after 50+ years, so keeping it simple and reducing steps/dishes is always a good thing for me! Since I quit sautéing with oil I even find the "water saute" step totally unnecessary unless I need to actually take the time to brown them or add them pre-softened to a recipe. Am I missing something? Also, I'm thinking of making savory versions of this instead of making separate fritters/muffins/pancakes! Thanks for all you do!!!

I have been craving pancakes so this is definitely something I need to try soon! When making your own oat flour, would this count on the daily dozen as a grain still?

He recommends no flour, only intact grains. That being said I have seen him eat flour 😅 - we have this whenever we want pancakes but day to day eat oat groats, steel cut, or rolled oats for breakfast.

I looked online and saw lots of chickpea flour pancake recipes, so it’s probably fine.

Hi, chickpea flour is great for like a egg replacement meal: quiches, frittata, etc. I wouldn’t recommend it for this recipe. Something more neutral would have been results: whole-wheat, Einkorn, buckwheat.

Can I use chickpea flour? I've been subscribed to you for about 3 years and don't receive any of your recipes that way. Same with many other youtube people. What am I doing wrong as I subscribed very early on and chose all updates?

You can hit the bell to make sure you don't miss a video. I wouldn't use chickpea flour, but whole-wheat; einkorn flour, buckwheat flour, etc.
