I am diabetic and eating water-soaked peanut every day. One day I ate 100g water-soaked peanut and my pp blood sugar did not increase. I found roasted peanut causing acidity in the stomach. We can also eat unroasted and unsoaked peanut, but water-soaked peanut is the best for diabetic patients. It provides protein and healthy fat. It contains very low quantity of carbohydrate, so, does not increase blood sugar.
