great video - could you tell me is it ok to put two wires in one end and one the other if i need to connect 3 wires e.g. connecting 12v puck lights to a parallel circuit

We would not recommend this but you can use - www.12voltplanet.co.uk/3-way-blade-terminal-splice-connector.html to do what you require.

But why not solder? When might you utilize butt connectors in lieu of solder and why?

Solder only vehicle's is prone to breakage sadly due to excess movement. If you are looking to connect two cable together yes I would recommend using butt connectors instead of solder to make sure the connection doesn't break as a result.
