I'm watching from start to finish even though I only eat gluten-free. Your videos are so relaxing. And I love.the way you shaped your bagels! So clever!

Unless you are true celiac, you probably will do well with einkorn. The gluten is very weak and very different from modern wheat gluten. Most people with gluten intolerance do very well.

Help Question here: How many grams of your einkorn starter from the fridge do you use to “refresh” ie feed to make the 2 cups of active starter for the bagel recipe…( how many grams of water and flour do you use to this amount of grams of starter?) Not sure I understand…Basically, I just made your sour sought starter tutorial baked one rustic loaf, put the starter in the fridge after that and have not touched it again it’s been one week since I put it in the fridge. I’m not sure how to go about making the active starter from that for the 2 cups needed for the bagels and the process of feeding it to make it ready?

Hi Shaye, would you consider doing more recipes with wheat flour or other more affordable grains? Einkorn grain is expensive and the pre-ground flour is super expensive. Many people are having to cut costs and budget very carefully during these times. Thanks for considering

Hi Shaye! Fabulous video. What’s the weight of the 2 cups of starter? Is this a 1x or 2x batch of the levain you usually call for? And what is the weight of the maple syrup? For anyone familiar with Jovial/Shaye’s dry sourdough starter, this would be the “wet” levain made from “activating” the dry starter, not the dry starter itself. This dough is about 32% hydration. If using all purpose “regular” flour, you can increase hydration to 38%. Einkorn does best with 15-20% less hydration than modern flour.

Hey @@christinearmao9 ! I would use the same weight called for (along with the starter and salt) and increase only the water. Bread baking has this funny metric called "baker's percentage". In this metric, the flour = 100% and the other elements are in percentages in relation to the flour. Water could be as high as 50% here but between 40 and 50 will be nice to work with.

I'm confused about something @theelliothomestead. I have a small container of starter like you taught us in the other videos. It's in a little container - just like yours. I use it for my sourdough boules and baguettes. For this bagel recipe, I don't understand how you now have 2 cups of it to serve as a 'starter' for your bagels? How do I take a small piece of my starter and turn it into "two cups of starter"...to then create a levain...to then create the bagels. Am I missing something here? and to complicate things further, I am only planning on making six bagels... Thanks!

Yum… I’ve never shaped them like that. I just make balls poke a hole in the middle and shape them. I’ll have to try your way. Once you make sour dough whole grain or einkorn all purpose you never really want to buy bagels again.

Ahhh ☺️ thanks Shaye, for a long time now I've wanted a recipe for your bagels. I've noticed how you've made them before and they look absolutely delicious. Thanks also for mentioning the part where you can dip them in seeds. I love the thought of dipping them in poppy seeds or sea salt crystals. Actually that's a thought, have you ever made giant pretzels? I'm presuming they would have a similar amount of flour and need to be boiled before baking too. 😋😋😋

Можно же хотя бы собрать волосы резинкой или красивое плетение, во время приготовления пищи, от этого вы станете только красивее, приятнее и аккуратнее. Я не хочу никого обидеть, просто этот канал смотрят тысячи людей из разных стран, приятно смотреть на хозяйку в аккуратном виде. Простите если чем то кого-то обидел. 🌹
