Little tip folks, before you ground your own meat, put the grinder attachment and meats in the freezer for 30 minutes. This helps keep everything cool, the meats not frozen, just firm enough but still cuttable, and once in the grinder, it won't jam up your grinder.

These look great and I love the idea of using herbs for the buns instead of just oil or butter but in all of my years of experience I came to the conclusion several years ago that the perfect burger must be pan fried. Especially if you're using thinner patties, which I do believe is better. The only exception is if you are doing a thick patty rare to medium rare cooked over a large flame quickly. The juices lost otherwise are not worth the charring. I like some charring so when I discovered this I wasn't very happy. We tend to think that grilling makes everything better so at least for me it took a while to figure out. So, I've never tried this and maybe never will (extra work that may not be worth it) but I assume we can use a torch to heat an iron to redhot temps and put char marks on both sides of the patties before that side touches the pan directly. The beauty with burgers over steak is that you can cook the selection of meat well done while retaining a texture that isn't rubbery or leathery. By cooking the patties on a griddle or in a pan you are also retaining the "broth" within the meat. What I do (because I do like some low sodium soil sauce and or Worcestershire ect...) is take the patties and immediately put them in some foil, add a small amount of whatever salty flavored sauces I prefer and wrap them tightly. I add more burgers as I go while also adding a small amount of those sauces as I go. Those thinner patties will absorb all of the flavors along with it's own juices. If you want to keep it simple (I often do) that last step I'll just throw some salt on them and let them rest in the foil. They'll absorb all of the salt. There's no need to season patties before or during cooking unless it's something like garlic that you want to toast with it. One more thing. I cook them using part of the slider method. That means I cook them on a bed of onions, sandwiched between more onions. Those onions get nicely caramelized while also absorbing everything. Those of course stay with the patties in the foil and on the buns. I hope someone finds this information useful. Play around with it. I assure you that you'll find your perfect burger.

This is a really interesting amalgamation of burger techniques. I had never heard of blending your herbs to make an herby oil for toasting buns. On top of that, adding fresh parmesan to your Oklahoma-style patties is a stroke of genius. And then thick cut pickles to cut all this fat? I have no notes, 10/10 will cook this for myself.

Grinding your own meat for burger patties is absolutely one of the best upgrades a cook can do! I love the herb sauce on the buns, it would really help keep the burger feeling brighter without veggies getting it mushy(hot lettuce, hot tomato 😅) the flavor of the Parmesan with the seared onions would also add a great depth to the flavor! This honestly seems like one of the best ways to make a burger, at least for my tastes!

Yeah, fresh-ground meat is the single best thing a homecook can do to make truly incredible burgers after they've gotten the actual cooking and technique stuff down. You can make a totally great smashburger from good storebought groundbeef, but you can make a mind-blowing smashburger by doing the exact same thing...and grinding your own hamburger. Even if you just have them grind the cuts for you at the store, incredible improvement.

I'd do 2 things differently: -> First, seal the buns and then add the herbs -> Secondly, I'd let the patties rest after removing it from the heat. If you let the meat rest a bit, the fluids go back inside. It helps the meat to stay juicy and keep the buns dry and crisp!

If you don't have a meat grinder you can use a food processor, still cube meat first before grinding. If you don't have a food processor you can use a chef knife. It's not fun and takes forever, but way better than store bought ground beef, and you chose the meat that's going to be in your burger.

You could do this easily on a cast iron pan, with ground meat from a good butcher shop, and it would taste exactly the same. Some of the other tips are good though. The best restaurants cook everything seared on flat tops and/or cast iron pans.

That actually looks and sounds like one of the best burgers I’ve seen so far on KZbin. The burger bun herb sauce is something I’ve never seen and putting grated parm to get umami flavor is something I’ve never heard of before. Really good ideas. I would definitely try this if I ever got a chance.

My nutritionist gave me a good receipe when I was on my last bulk, it included marinading the meat with worcestershire sauce, red onions and a chipotle mayo which was made from chipotle paste, mayo and garlic granules. It was actually delicious.

Liam Williams nutrition, look him up. He primarily works with combat athletes, even endorsed by George Lockhart. Charged about £140 per month, gave me a new meal plan each week and gave me 3 consultation calls a month to track progress. Nutritionists are great if you want to take your training and nutrition seriously, and acquire professionally optimised meal plans which are personalised to yourself. If you still feel you need more answers, then Google is right there buddy.

I think the initial smash needs to be burger directly with griddle to have a better crust. Onions can go on top of the ball before smashing. Otherwise it looks amazing
