This is a recipe for a rare cheese cake made without an oven and without baking.
I made it in strawberry flavor with a pretty pink color. I knew it would go well with cheese.
Since heart cakes have been popular lately, I put it in the middle and jelly around it.
▷Ingredients (15cm x 15cm)
■Strawberry rare cheese cake (12cm)
120 g cream cheese
25 g sugar
80 g strawberry purée
120 ml whipping cream
10 g sugar
3 g powdered gelatin
20g water
■Strawberry purée
150 g frozen strawberries
20 g sugar
1 tbsp lemon juice
▷How to make:
1. Combine frozen strawberries, sugar and lemon juice in a small saucepan and toss the strawberries with the sugar.
2. Mix cream cheese and sugar until smooth.
3. Cook (1) over heat until the pulp is crushed. Strain the strawberries through a strainer to remove the fibers.
4. Add 80g of the mixture to ② and mix.
5. Add the sugar to the cream and beat loosely, then add to (4) and mix.
6. Sprinkle gelatin over water to soften, and dissolve in boiling water. Add to (5) and mix.
7. Place a piece of plastic wrap in the bottom of a 12cm heart cellule and secure with rubber bands to prevent shifting. Pour in ⑥, scrape the surface to make it flat, and chill in the freezer for 3 hours or until firm.
■Rare cheese cake
80 g cookies of your choice
20 g unsalted butter
80 g cream cheese
10 g sugar
80ml whipping cream
2 g powdered gelatin
20 g water
1 tsp lemon juice
▷How to make:
1. crush the cookies into small pieces, add melted unsalted butter and blend, place the cookies in the bottom of a 15 cm mold and refrigerate for at least 30 minutes to harden.
2. Remove the strawberry heart rare cheesecake from the celluloid and place on top of the cookie layer.
3. Unmold and set mousse film on all four sides.
4. Add the sugar and cream to the cream cheese, in that order, and mix.
5. Sprinkle gelatin over water to soften, dissolve in hot water, add to (4) and mix. Add lemon juice and mix.
6. Put the rare cheese mixture into a bag and squeeze around the strawberry rare cheese cake. Flatten with a toothpick and refrigerate in the freezer for 30 minutes.
■Strawberry jelly
70 g strawberry purée
2 g powdered gelatin
15 g water
■Lemon jelly
1 pack of strawberries
150 g water
1 teaspoon lemon juice
30 g sugar
4 g sheet gelatin
▷How to make
1. Make strawberry jelly. Sprinkle gelatin over water to soften, and then dissolve in boiling water.
Add the dissolved gelatin to the strawberry purée, mix, and pour over the rare cheese cake. Refrigerate for 30 minutes.
3. Wash the strawberries, remove the stems, and cut them in half lengthwise. Arrange them on top of the strawberry jelly.
4. Make the lemon jelly. Blanch the gelatin in ice water.
5. Put water, granulated sugar, and lemon juice in a saucepan and heat until the granulated sugar dissolves.
6. Squeeze out the water from the gelatin plate and add it to the water to dissolve. Cool the jelly by placing it in ice water until the temperature reaches about 20°C .
7. Pour the jelly over the arranged strawberries and refrigerate for 5 hours or longer.
