I actually tried that several times, I just didn't include it in the finalrecipe because some people don't like yeast and I didn't want anyone to think it had to be an essential ingredient to make it work. 😁

I’ve made Victor’s bread a few times now but I told him, I make it in the air fryer in smaller loaf pans. I have also added cheese to it. I am going to flavor it a couple of ways and try it out.

I am so so happy that you tested out Victor's bread. He said he was out in his backyard jumping up and down like a kid when he received your email saying you were gonna test it. I am convinced now that I really need to try it even though I am more of a white bread type girl. Victor said on his live Q&A on Thursday that he is working on a more like white bread version too 🙂 which will make this girl happy 🙌🙌 You also need to test out his pizza crust. I just made Victor's keto bread this morning. I am eating it now with collard greens. It is delicious. I had whole psyllium husks on hand, so I put them in my VitaMix blender to turn them into a powder. I used my VitaMix also to make the pork panko. I used my stand mixer; easy peasy. I do a version of the Deidre’s bread but with a little bit of lupin flour and never went back to any other breads. I do about 60-70 buns every 5 months or so and freeze them. No one that eats my bread think it is keto bread. It taste exactly like whole wheat bread. 😊

DRY INGREDIENTS 2 ⅔ cup of Vital Wheat Gluten 1 ⅜ Cup of Lupin Flour 1 cup of Oat Fiber 1 cup of almond flour ⅜ cup or 1/2 cup of Confectioners Swerve or sweetener of your choice 2 tsp of Salt 1 tsp of Xanthan Gum

@@malikab123 This is how I do it in my oven which can be different in yours, but I turn my baking pan so that the cooking is even. I hope it is not too confusing. Preheat your stove to 350 f Prepare your yeast by placing in a 4 cup container or measuring cup your honey in the warm water, and stir to dissolve it, then add the yeast and stir, let it proof. makes 13 hotdog buns of 110 gm each for a double recipe. Cook them 8 mins than rotate the tray and cook them 8 mins more until golden brown and hollow sounding when tapping on them Check the button from 16 mins on... add a min or two if it is not golden. place on a rack and cook ...freeze in freezer bag. Direction Begin by mixing your dry ingredients: vital wheat gluten, oat fiber, lupin flour, salt, xanthan gum, and confectioner swerve. If you don't have confectioner swerve then use whatever sweetener you have and put it in a spice grounder or blender, then blend until it is a fine powder. Using a whisk, incorporate and sift all your dry ingredients together until well mixed. Set that bowl aside. In your Kitchen Aid bowl add your proofed yeast, room temperature eggs, very soft to almost melted butter and mix. With the paddle attachment, mix until well combined for 30 seconds. Now pour in the entire bowl of your dry ingredients. Still using the paddle attachment, mix until dough forms. Switch from the paddle attachment to the dough hook and on medium speed, knead for 7-8 mins. After 8 eight minutes. place it in a big piece of saranwrap and let it rest and grow in size, it will almost double while you clean the dishes or prepare another batch. Weight 110 g of dough and shape it into something resembling hot dog buns then place it on a baking sheet lined with silicon Mat or parchment paper that was sprayed with a bit of avocado oil. Cover the buns with a piece of Saran Wrap and with a dish towel and let the buns rise until almost double in size (approximately 2 hours ) on top of an oven or somewhere warm. Then remove the Saran Wrap and place in 350f oven and cook for 8 mins. Turn the baking rack and cook 8 more mins until the button is golden.

yeah, do it. keto people often don’t because it has 1 gram net carbs per tablespoon. and/or they don’t realize yeast adds flavor to bread. neither reason is a good one not to add it.

Wes, the purple hue when you cook with the husk is due to cooking with baking powder that has aluminum in it. Use aluminum free baking powder and the problem will disappear. Good luck. Enjoy your shows. Keep up the good work.

Thanks, Ann! I’ve heard this before, but I use Rumford Aluminum-Free Baking Powder, so that’s not the reason why - at least in my cases. I’ve researched this before and several experts suggest it’s how much of the outer husk is ground into the psyllium fiber powder. “Psyllium husk contains an antioxidant in the outer layer of the psyllium husk seed called anthocyanin that can turn your bread or other baked good purple if too much of the powder is used.” www.bakerita.com/what-is-psyllium-husk/#:~:text=Why%20does%20psyllium%20husk%20make,of%20the%20powder%20is%20used.

For a bit of a lighter texture I would grind the pork rinds a bit smaller and sift them before adding them. That makes a huge difference, particularly in recipes that use a lot of pork rinds as a flour substitute

Made it watching southern keto My loaf was heavy and dense. I told victor the additional salt not necessary. I didn’t like it even after toasting. For me it was a waste of a dozen eggs, block of cream cheese and 4cups worth of pork rinds. I appreciate the efforts everyone puts in to find that “perfect “ Keto bread and trying recipes is the only way to know which one will work for you but it still aggravates me to waste expensive ingredients. The bread recipe from Mary’s Test kitchen so far is my favorite. I don’t make it more often because of the rest and rise time but when I have the time I made it.

Victoria at victoria's keto kitchen has a bread machine recipe that looks good but I haven't tried it yet. I do make her keto flour and have used it for a few things with success. Alicia at keto upgrade has a yeasted bread recipe that has become my go to when I am wanting a yeasty flavor bread. It does require some rising time but that can be cut way back as I have found it only affects the yeast flavor. I need breads that are not calorically dense as I have portion control issues!

Here in Australia, a dozen grass fed eggs are $9.00, also pork rinds are also expensive, at $4.00 per packet, and 4 were needed, cream cheese is $6.00 a packet, plus the one packet of butter is $5.00 . All up minus the other ingredients , would cost me $ 35.00 per loaf!! Way too expensive for me to even try the recipe. But thanks for showing it.

The prices are high here too... organic pasture raised dozen eggs $6.12 , Kerry Gold butter $4.00, philly cream cheese 1 pack $2.98, pork rinds $2.38 x 3=$7.14 it took 3 not 4 Bags That is $20.24 all from Walmart per loaf. I would not buy those cheap pork rinds. The ones I buy are organic and are $5/ bag. So way too expensive for 1 loaf of bread. Deidre's bread in my opinion is the best priced.

I am a huge fan of Victor's recipes and presentation. I can't get on board with this recipe, though. That is just one super-expensive and extremely calorie dense loaf of bread. Thanks for doing this, though. His channel can use all the exposure it can get. He does an incredible job there (you're no slouch, yourself).

I just did a rough calculation of the recipe that I use from Alicia at Keto Upgrade (her Yeasted Bread recipe), and it's about $4 to $5 a loaf depending on what you are paying for the egg white powder. But like you said, to each their own. We all must do what works for us and within our individual budgets. : )

Most folks don't know but you can make low carb bread with vital wheat gluten and flaxseed meal with other ingredients and its amazing wheat gluten is mostly protein very low in carbs and gives low carb breads the structure to do anything bread or dough can do and it actually tastes like regular wheat breat but without a ton of carbs and loaded with fiber and protein

it may be good. BUT the costs are prohibitive. A dozen eggs are $6, pork rinds are at least $4, butter is whatever it costs the day you buy it, edilbe P husk powder is a small fortune. . Its going to cost at least $10.00 a loaf. For that much, id rather just buy a good Keto brand off the shelf. Kudos for coming up with a decent recipe.

Thanks for commenting, Darcy. Not my recipe, though... Just testing it. But I understand the price concerns. Not sure where you live, but I'm in Southern California where groceries are pretty pricey and I paid $3.79 for a dozen eggs and $1.99 for the pork rinds. A loaf of Orowheat Keto Sandwich Bread is $7.99 (but contains gluten), and the other bread mentioned in the video is made with Bamboo Fiber which is $28/per pound. So it works out to be a little more than commercial keto bread but much less than some of the other homemade options.

I didn’t taste “pork rinds.” As I mentioned in the video, it does have a “savory” taste but I would not have guessed it was pork rinds had I not known. I think especially when combined with whatever you’re using the bread with (deli meat, cheese, peanut butter, jam, etc.) you certainly wouldn’t be able to discern they were pork rinds.

@@HighfalutinLowCarb sorry, I heard you say savory in the video but but wanted to make sure it wasn’t pork rindy in flavor. 😆. It may be worth a try being pork rinds aren’t that pricey. A couple more questions. Is the loaf big or small? Sometimes it’s hard to tell. And do you think it would rise if the yeast was bloomed? Thank you for your time and testing out these recipes.

The loaf was big. Someone in the comments said it looked small, but it’s a nice sized loaf, for sure. As for yeast. It would certainly add a “bready” flavor. But I’ve never had much luck getting yeast to help a keto baked good rise very much. The yeast creates the gas necessary for rise, but without gluten to “capture it” like a balloon and allow the lifting to occur, it’s more of a flavor booster than a rising agent, though you may get a little boost. It certainly wouldn’t hurt to try it. Even if you didn’t get any more rise, you’d get some yeasty flavor!

@@ketokarbs3671 I did.... So I forgot to take it out of the parchment paper to Cool off, forgot to stick a thermometer in it, and to let it sit in the oven with the oven off for 30 mins ... All that being said, it was too moist and I could taste the pork rinds too much.... Maybe if I did those steps it would've been dryer and less if the pork rinds taste but.... Trying to see how it eat it now 😩

@@shimmerofadiamond Maybe the cooking time needs to be extended for your oven (they're all different a bit) so the egg/pork rind taste can cook out properly. Yeah - I have trouble if things taste eggy! Just knowing there's lots of eggs in some things make me taste them more! LOL!

Absolutely! Put one packet of yeast in there and it works just fine for the taste. Doesn't add anything to the risiness... Is that a word? I just didn't want to include it in my recipe because a lot of people don't like yeast because of the carbs or whatever other things and I didn't want anyone to think it was an essential part of the recipe. You can totally use it for flavor 😁

You need some acid to activate the baking powder. You *might* try white vinegar instead, but I can’t comment on the flavor it might impart. Baking soda needs acid to activate it, hence the little bit of lemon juice in the recipe.

imho you could likely get away with using only about half stick of butter in the bread. i used 1 stick because i plan to use it for other things. ill be making this again before i may any other egg white bread. that stuff isnt cheap

Good point! To be fair, it wasn’t that expensive compared to the other recipe I mentioned in this video that calls for Bamboo Fiber, which costs about $26-$28 per pound! The trouble I think many people have with commercially-available low carb breads is they usually contain vital wheat gluten, which most people eating keto try hard to avoid. I’ve not seen any decent commercial keto breads that don’t contain some form of wheat gluten, sadly. :-( So, this is a good option for those looking to avoid gluten and nuts. My dozen eggs were about $3.79 here in Southern California, the pork rinds were $2/bag and the cream cheese was $2,29. A loaf of Orowheat Keto Bread is $7.99, so the recipe was a bit more expensive than the commercial bread, but avoided the wheat gluten.
