I love how gentle his voice is and that the teaching isn't intimidating. Easy to follow. I am a late learner but i feel like i can be comfortable cooking most of his recipes. Arigato gozaimashita!

Hiro is such a good teacher. Even though he’s not teaching in his native language, he’s able to explain everything in good detail and highlights important points/neat tips. Also, big thanks to the cameraman for all the behind the scenes work. You guys seem like good friends & would be some fun drinking buddies lol

It's great to see a restaurant talk about an ever evolving menu. It seems to be the case that most restaurants seem to believe that a menu is a static thing that can only be added to and end up with an outrageously huge menu that none of the items on it get the attention they deserve. **French Chef trigger warning!!!** Hiro just showed an awesome way to simplify deboning a chicken. For some reason, deboning a chicken always scared people in culinary school. With this technique it seems you get a similar amount of meat with about a tenth of the amount of time. This dude is great.

thanks for the deboning tips. normally karaage recipe uses potato starch, corn starch looks so good too. for me easier to find than potato starch.
