I love Hiro for just being simple and human in every video. Sometimes making a joke, explaining everything and just cooking like freaking god. He just puts a smile in that cooking and makes every professional video so simple. Thanks to him i advanced my cooking skills (which were pretty good, not gonna lie, didnt start as an amateur) - thanks to him i learned how to make good seafood in diffrent ways. Now i changed some of video recipes by my preferences and served it as I like - in elegant style - turned out PERFECT. Thank you Hiro and don't change. Btw. Best video was with lobsters - I 1:1 copied your recipe and it turned out great in just first try. :D Cheers, and alot of health during pandemic, from Poland! 🤩

Japanese aren't as puritan about ingredients as a lot of western chefs can be. The primary goal in Japanese cuisine seems to be the balance of presentation, smell, and texture, and not just taste. A good chef can accomplish that even with inferior ingredients.

I love watching a Pro work. Some cooks can't produce even with all the pristine ingredients right at hand. My own success rate for improvisational cooking is around 50%. But anyone who has looked in the cupboards, decided what was at hand, and created from pure wishful thinking, has had a few "Oh Well" results.

I like how you used the ingredients that you could buy from Target. I feel very fortunate that I live near five Japanese supermarkets and most of the food is available except for some packaged food like instant ramen. I can even buy toilet paper and rice at any of the markets and some of the expensive rice was on sale. I enjoy watching your channel even if my Japanese wife cooks almost all of the meals. I only cook a few dishes like my father's spaghetti, okonomiyake, yakisoba and a few more dishes. I would like to go to Harry Soo's BBQ class after the end of Covid 19 and learn about cooking good BBQ. Keep making the videos and stay safe!
